Would having all followers essential/mandatory result in a better story? (RP vs Story)

I don't really think that the theory of the optional companions being more essential to the plot if they were mandatory holds water. Having only a few of the party companions be impactful to the plot has been a staple of the franchise.

 

In DAO, it was just Alistair/Loghan and Morrigan, and even then, Morrigan could leave and you'd still have the most important elements. 

 

In DA2, there were more who were crucial, Anders, Aveline, Varric were all essential. Arguably Isabela was as well, but she was also an optional companion. 

 

It just seems to me that they're only going to give a few of the party intrinsically important roles in the main plot either way.

No, it's not necessary for them to be mandatory, if you are willing to write it in a flexible way. Currently "optional" means that there is no real impact. DAI can work with only Cassandra, Varric and Solas. You could still have the companions optional and make the story flexible. For instance it could go this way: if you don't recruit Vivienne, things would get more complicated at Winter Palace...or less. It would be interesting if recruiting or not recruiting would have impact on the story.
