Going through an insanity run for the platinum trophy when my save file becomes corrupted and I thus lose all progress. I had just finished Thessia.
My question is, could I simply just switch to my other save file and complete the last portion of the game on insanity, or am I clutching at straws and need to do the insanity on one straight playthrough?

If you have a save before the Thessia mission you can reload from that spot
Unfortunately not, the entire profile save was corrupted.
I have got a suitable save to load from on my original profile I beat the game on on normal difficulty, but will that count if I've done some of the insanity missions on one profile, and finished them on another?
As far as I know, to get the trophy, the playthrough has to be on insanity from the time before Shepard gets on the Normandy at the beginning to when Shepard makes his/her ending choice.
My guess would be that it doesn't work. But I think you could load your other profile and check the trophy progress from the main screen. If I remember correctly it shows how many missions on Insanity you've completed (check the Unwavering trophy). If it says none you're screwed.
BTW, I've read about the Extended Cut maybe causing some glitch so the trophy doesn't unlock (on PS3), so maybe play without it to be sure in case you have installed it.

Unfortunately like the other guys have said, i think it has to be from start to finish on a single profile. So if the entire character profile has corrupted and you can't pick out a particular save that will load, you may have to start again on a fresh import/character.
