Assuming the rumors of a remastered trilogy are more than just rumors, one thing I'd love to see with the update is Saren getting two different versions of his character model.
Saren is indoctrinated from the start of Mass Effect 1, but early in the story has not received any cybernetic upgrades yet. If he had been walking around as a cyborg from the beginning, one might expect the Council to be a little more suspicious than they are when Shepard first accuses him of cavorting with Geth & attacking Eden Prime. The cybernetic upgrades don't occur until later in the story, after the confrontation with Shepard and accusations of indoctrination implant doubts in his mind. Sovereign makes him a cyborg to harden his resolve, and to make sure he remains useful.
The issue is that it always seemed that Saren was originally planned to have two different versions of his character model, similar to how the Illusive Man has his normal & cyborg versions in ME3, but that at some point it was cut. In the actual game Saren's appearance doesn't change and he looks like a cyborg throughout. The odd thing is that Saren's appearance altering to become more cybernetic in the middle of the game is commented on by Shepard, despite there being no actual change with the character model. He looks exactly the same as he did on Eden Prime.
On that note & on the off chance that any devs look at this...I would like to ask for that to be remedied if it all possible in a remaster.

It's a minor detail, but it would be cool if Saren's character model doesn't begin the game with the cybernetic upgrades that occur later in the story. As it is, he is a bit of a walking spoiler.
