This is the crux of the issue from my culinary P.O.V.
If I may;
I have seen many "food trends" in my time in the kitchen trenches, and none (atkins, low-fat, sugar-free) are nearly so heinous as the present trend of "gluten-free", and the reasons are many:
- it makes legit Celiac disease people and those with real gastrointestinal issues look &/or feel like fakers or Mary-sues because only approx. 2% of US adults have an ACTUAL medical need to avoid gluten
- it raises costs of food production
- it is a product of the mass Media (Gwen Paltrow, Oprah, Miley Cyrus, etc. all propegate the trend)
- it's very difficult to prepare a three course meal in an average restaurant without gluten in something. It is in many, many products
- 95% of people tossing the term "gluten-free" around have NO IDEA what gluten is!
