I think they were going for an authoritative look without the ingrained pomposity of a king, especially since you aren't actually one.
Inqy would probably look more regal/authoritive with the armor on....passing judgement in your PJs....no, just no.

I know my IQ is in excellent shape because of all the extreme workouts he/she gets, saving the world, but when he/she is slouched on the throne, it looks like he/she has the ab strength of a 95 year old.

I'm gonna dispute this. I don't know why everyone calls them jammies. I think Game of Thrones was an inspiration. Tywin has a similar coat:

They're neutral enough overall to fit any inquisitor.
As a counterpoint, the way the IQ points at people and voices the judgment fits serious inquisitors more than cocky ones.
The jarls sat the same way in Skyrim and I hated it then, just as I hate it now in DAI.
