There isn't really an elfy choice in that dialouge.  The best you can do is atheist.  Annoying, but that's what we're given.

But how will that affect the story?

The story still moves on regardless of your character's belief. Its pretty much forced.

You still get the option to say you believe in the Creators later on; and you also get options to say you're not the Herald.  You'll not get any options that allow you to claim you speak for Andraste (which, if you've been denying you're her Herald, you're not getting anyway).

Spoilerd, because I don't know if you've played before and want to give you the option not to read this:

EDIT: Re-reading your first post it seems I misunderstood you slightly.

There's also no way (that I've found on several pro-Creators playthroughs) to get a pro-Creator option with Cory in the endgame.

Kinda like how IRL you say what people will find most comforting despite not believing it. That's what I did.

You are these people's beacon of hope afterall

I admit, I lol'd at 'Solas likes this' in the OP.

What's strange is there are situations where you can say you're the Herald so long as you're a believer in the Maker; even if you said you weren't the Herald. Ex: The end of In Hushed Whispers when addressing the templars and when judging Ser Ruth.

At what points in the game can you be established as believing you're the Herald? It seemed only when Cassandra first mentions it in front of Chancellor Rodricks do you have the option of approving/refusing. I chose the aggressive "are you serious?" response and for the rest of the game they assumed my character didn't believe she was the Herald; even when she said she was in the above examples.

EDIT: Maybe when addressing the Clerics in Val Royeux as well? It's obvious there were two faith checkpoints with Cassandra asking if you were a believer and right after Haven was destroyed, but I'm unsure about believing you're the Herald.

The only time I tested it was at Val Royeaux.  Had Adaar say she was Andraste's Herald to the priests, got an option to tell the Templers they were denying Andraste's will in the converstation before the storm off.  Re-loaded, didn't pick that option and didn't get the Herald option.  I hadn't picked any pro or anti Chantry/Maker/Herlad options before that.

You had to have picked something when Cassandra said, "Providence. The maker sent him/her to us in our darkest hour." at the end of the game's prologue.

I don't remember picking anything that either strongly agreed or disagreed with Cass at that point.  I'll have to test out the options in my next game.

It seems unless you choose the thumbs up response everyone assumes you don't believe you're chosen. Maybe that can be changed in Val Royeaux the way you can become a believer/lose your faith after Haven is destroyed. I'm just curious about the "I am/am not the Herald" checkpoints.

What's additionally quirky about the believer/herald checkpoints is how right before punching Solas he'll challenge a believer Inky. If you say "the lie is useful" it doesn't change anything on your character's views.

There's an option to say that religous fantatics are to blame.  I feel that option doesn't really give the indication of what religon Lavellan believes in.  It's not pro-Creator, but it's also not anti-Maker or atheist.

I'd choose "This is a waste of time" in your case. It's a neutral option that I believe shows up after investigating dialogue.

Lol, do we? I rarely ever do that, especially when it comes to 'god belief'. ¯\_(ツ)_/¯

Just pick the option that was in the trailer, about fanatical belief, honestly, it's pretty neutral on the stance and is among the Inquisitor's best dialogue in the game.

Yeah, the fanatics are to blame option. It's a good line and it works for every background.
