I'm saving up to get a Playstation 3, I already Have Uncharted 1 & 2 and FFXIV: A realm Reborn. I'm into action-adventure, RPGs, puzzle, platform, fighting, anything like that. Not too big on First-Person Shooter/C.O.D types though. No TES games, I already own them for 360 and heard they are crap for the PS3. Suggest away!
EDIT: Also any PS3-exclusives that you can think of, anything I can get for the PS3 that I can't get for the 360.

Those are DEFINITELY on my list for sure, like a no-brainer.
Tales series, inFAMOUS 1&2, Uncharted Series, Last of Us. All I can remember now.
Heavy Rain. It has a ton of different endings based upon your choices how well you do the quick time events (there are a few significant choices though) and you get to play between four different characters. Can you catch the Origami killer or will you meet an untimely end?
Drakengard 3, Nier, Star Ocean 4, Metal Gear Solid 4, Valkyria Chronicles, Demon Souls. I think Assassin's Creed is ok as long as you stick to earlier and not later ones.
The Last of Us won like every award ever I haven't played it though, tempted to throw Asura's Wrath in right now but haven't completed that either though.

Tales series, inFAMOUS 1&2, Uncharted Series, Last of Us. All I can remember now.
I plan on getting into Tales when I finally cop my PS3. This year is the year to do so with Persona 5 coming out. I've been wanting one long before now but I bought another 360 like a dumb ass when I had the chance to get a PS3.
Edit: So dumb and ass together is censored but ass isn't? GG BioWare. Y'all need to get off that PG sh*t. Don't you make M rated games?
Killzone 2/3 and Ni No Kuni. There are plenty of PS2 collections (for MGS and Sly) you can try.
Also preorder Purse Owner 5.

I've recently gotten a PS3 myself, and have yet to play all the games I got along with it. But, I know from others and from playing some of them, that they are very good and probably well worth the investment:
The Metal Gear Series
Assassins Creed 2
Fallout New Vegas (Sort of a first person shooter, but not really...at least I don't play it as one, you can change perspectives. Regardless it is a very fun game)
Also, for ridiculous funzies....Lego Hobbit

i also just got a PS3 and here are some of the games I got along with it:
Uncharted series -> This one is a must have IMO. All three are great fun!
The last of us -> Zombies are usually not my thing but so far it's good
Red Dead Redemption -> If you are into the western setting, it's a good game.
Heavy Rain -> Great story, probably one of the most branching story lines I have seen since the Blade Runner adventure
Beyond_ Two Souls -> Great Story, barely any gameplay of note. I will recommend it for the story alone though. Just be sure that you are ok with the limited gameplay. It's great for a relaxing evening, when you don't quite want to watch a movie but almost.
Metal Gear Solid Collection -> Haven't played those very far yet but the 3rd part looks promising
Dragons Dogma -> Also not played very far yet but also looks interesting
Mass Effect Collection -> Wanted to see how it plays on the console. If you already have it on PC, don't bother. From I have seen so far, 2 and 3 are ok, ME1 is horrible (the loading times!!! I guess I am spoiled by almost instant loading even with improved textures but this is just unbearable.)
Definitely get Uncharted 3 in addition to 1 and 2. Ghostbusters game is pretty fun, too - all the original guys' voices (RIP Harold Ramis).
Mortal Kombat was pretty good, and I don't even like the franchise.
Beyond that, most of what I like has already been listed or is on 360 as well...
Ah yes... X:COM: Enemy Within is a fantastic turn-based strategy game... It's on 360 too, but w/e... I'm still going to mention it.
edit: One other thing... somebody mentioned Fallout: New Vegas. If you are going to buy that game and can't get the PC version, then buy the 360 version... the PS3 version is missing a lot of NPCs and just isn't as good (I've played both).
Tbh though, I bought the PS3 mainly for access to the PS1 and PS2 classics, not for the PS3 exclusives...
IMHO
Mortal Kombat - Komplete Edition & Injustice - Gods Among Us, if you like fighting games.
God of War series, if you want entertaining with hilarius/pulp situations in a sort of peplum way.
Castlevania - Lords of Shadows 1 & 2, if you like action & adventure with a good screenplay.
Remember Me and Asura's Wrath: two really different titles - by every perspectives - with a great atmosphere.
Souls series, a must have if you are an hardcore (for real!!!) RPG gamer.
Dragon's Dogma - Dark Arisen Edition, very beatiful title. A little slow at the beginning but it's worth it.
Metal Gear Solid series, only if you like tactical stealth/camouflage situations with epic boss battle.
Red Dead Redemption, it's a masterpiece: seems to be in a Sergio Leone's movie. Awesome!
