Yep, when I first finished the game and realized I couldn't casually kiss Dorian anymore, I actually regretted finishing the main quest. It's one of the reasons why I don't finish it anymore. It might sound like a petty complaint, but really, this whole game is just a huge, poorly-implemented, lacking, and underwhelming disappointment. The ending only contributed to the empty feeling the rest of the game left me with.
I was thinking of not finishing the game with my other characters, as you've done, but that doesn't feel right ...
Now that I am playing the DLC after finishing the main quest I have almost no reason to go back to Skyhold, as I cannot interact with anyone ... a pity 
I hope Bioware unlocks the default dialogue with a future patch or DLC, I know I can imagine it, but for the same reason I could have imagined the whole game. I'd rather play it
