That person has a different set of videos for the cut content. Cassandra is in one of them.
Banters in general are a bit hit and miss sadly
For instance in my current PT I have been trying to get Cole and Dorian to talk to absolutely no avail
I've never heard any of his banters in game because I generally don't take Cole out with me (I prefer to have three ranged and SS Warrior). I think Cole knows I have neglected him in my other PTs and is punishing me QQ
But yea, there are a lot of things which seem to randomly trigger or not trigger and I can't figure a rhyme or reason to them.
There is also something about Cassandra's romance that just feels off, I'm not exactly sure what it is (but I've been thinking about it for awhile) it's like it does not feel thorough enough (e.g. characters like Varric, oddly enough, say nothing about it), and on Cassandra's side she seems to be apathetic throughout the whole affair. That later part might just be my bias, due to the fact that the first time my Inquisitor romanced her I got Cassandra's Divine ending. However, that whole conversation even feels flat, it might have to do with the fact that Gaider and Weekes did not actually conclude Cassandra's romance, something that I think saped the emotion out of that final conversation on the balcony.

There's a lot of banter about the romances. Sera and Bull have a TON in regards to Cassandra and the Inquisitor.
My two favorite romances in the game, so I say do both of them. They're worth the time.
However, I'm partial to Dorian. For me, it's the most emotionally fulfilling romance Bioware has done so far, but that's probably because I find Dorian's romance specific character development so relate-able.

Yes, reread that bolded line again I specifically mentioned Varric, who apparently has one banter about it. Yet it is a rare banter that few people have experienced in game, and instead experience it via banter video on YouTube.

I romanced Cassandra in my game, and i'm pretty sure Varric said something about it. It may just have been this one comment, but it was something at least. Or maybe i'm getting him mixed up with some other companion. At least two of them commented on my romance with Cassandra.

I said that too and I still ended up with Dorian! Also things happened in a different order on that PT which was interesting but I've never had it go this way on the mage games.

Honestly, they're both my favorite romances in DAI, despite how I generally only play female characters.
(It took years for me to get around to playing male for Morrigan, and I love Morrigan- I think I had sixteen playthroughs before I actually played male in Origins.)
So, in my opinion? You can't go wrong. Both of them have sweet centers they try and hide (her with briskness, him with sarcasm) and they 'melt' adorably for the one they love, and both obviously come to care about the Inquisitor and love him deeply. So flirt with both at the beginning to see who charms you more, and then move on from there. Just don't flirt too much with both at Skyhold or you'll end up in that awkward stage where they actually start talking about you flirting with both of them and you have to break someone's heart (in Cassie's case in particular, it's like the Inquisitor doesn't even realize he's doing it to her, and it's heartbreaking to me).
Dorian. Let's you have the option to not have to have sex in the relationship.
