Northern Hunter is the easiest dragon of the standard 10 to defeat, IMHO. My recommendation is start with the Abyssal High Dragon in the Western Approach. True, it has some annoying side quests that have to be accomplished before you can fight, but in terms of an introduction to dragon hunting that's not too hard and not too easy, I think it's the best starting place.
