After a long exposure of the red lyrium that was infused in her sword back in DA2 wouldn't it had made sense for her to turn into a Behemoth instead of a giant size red lyrium stone? It would of made perfect sense for her to return to Inquisition as one of the main antagonists that is working with Corypheus.
Why didn't Knight-Commander Meredith turned into a powerful Behemoth?

It might be because of how Meredith suffered exposure: She was not ingesting red lyrium nor did it seem like she was having bits of it jabbed into her like the Red Templars were and had.
Meredith's exposure came through non-skin contact and likely also from channeling Templar abilities while wielding the sword which may have had a strange effect when combined with the red lyrium in the sword. It is possibly she may have touched it without gauntlets or something but I think contact of that sort was minimal. It was deterioating her mental health primarily because of her proximity to it. Her turning into a statue possibly came from using her powers and combining them with the sword which may already have been destabilised hence why it shattered.
The lyrium idol may also have been different from regular red lyrium.

It may be that the lyrium idol was designed to basically just quickly transform people into red lyrium.

She didn't use it, though, and she was experienced with dealing with lyrium. It may be that the process only started once she converted it into a sword.
More likely, Bioware just didn't want to get accused of recycling the ancient rock wraith as a final boss.

Behemoth didn´t exist before. DAI needed some cool gigantic enemies, coz reasons. Exhibit A: Giant dwarfs.

They recycled environments sure but I don't think they wanted to recycle their own bosses.

Or the idol was designed to be able to draw off it's power without suffering any severe physical effects. Barring the final transformation of course but that might be inevitable.

I remember a character in the game mentioning something about Samson's armor being the key to his power and exposure to it made him more and more corrupt. I imagine Meredith ran into something similar. The only difference is that Samson was ingesting red lyrium at the same time—Meredith was not.

To become a Red Templar in a short time you need to ingest Red Lyrium. Meredith didn't do that, that's why it took years for her to become mad
