I would probably have used the winged mounts of the Nazgûl, but the Wardens seem to be mostly decent folk from what I've seen so far. (DA:O and DA2, all DLC, never read any of the books, so there's a strong possibility I don't have the whole picture)
Still, the eagles of Middle-earth are an excellent analogy. They're Manwë's messengers, after all.

It is a good point I hadn't thought about, that they could use their griffons aerial superiority to easily kill off darkspawn and other enemies. Forget landing to fight, they could just swoop all over the place doing what the eagles were doing in that video. The warden's really need to get breeding their griffons again now that they have 13 new hatchling griffons to work with.
In one scenario for when the darkspawns are attacking a city, I always pictured a surprise attack from the air behind the darkspawn lines with the gryphon mounted Grey Wardens tearing into the siege equipment and their crews along with any magic using emissarys in sight. Then the Warden vanguard would slam into the enemy flank and hopefully the galvanized city defenders would sally forth and join the wardens in driving the horde back. After that the Wardens would mop up any stragglers and pursue the fleeing spawn to their Deeproad entrance, with gryphon riders providing constant intelligence while swooping upon their hapless foes.
Sometimes, swooping is not bad.
