Human. Turians can't duck. Quarians can't remove their suits. Asari are fan service. Everybody else isn't practical either because of limited animations, limited armor variety, or limited romance possibilities. Can you even imagine two krogans having a romance scene? Better yet, two elcors... BioWare sticks with humans because they offer more flexibility than any other race. The only way to get around this is having other races that are almost identical to humans (i.e. fantasy humans like Dragon Age).

Oh.. I would so love the option to play as really ANY other race than human. My first play would be Quarian without a doubt. Then an Asari. Probably wouldn't play a Volus, but you never know. Depends on how well the writers actually write the race experience to be unique. If its 99% the same in every playthrough with just a 'human' in a other race costume, then I usually forego playing the most extreme versions.
Of course, if its done right with lots of unique interactions based on race, then I gravitate to the more extreme races.

Turians are the greatest! Die for the cause! (Though not really cause I always go destroy)
If Bioware adds playable races, I'd praise the next ME as much as the others and overlook whatever flaws it might have.
I'd even donate to make it happen, please.

but my top ones
1. Alliance Infiltration Unit Infiltrator, unlike Geth they do infiltrate.
2. KROGAN!
3. Salarian, they are great singers.
4. Quarian, but with a Geth uploaded into their suit.
5. Awakened Collector, to take the mute protagonist to the NEXT LEVEL.
6. Geth, too bad they don't infiltrate
7. Asari, because I'm Blue Da Ba Dee Da Ba Die.

Humans are the superior race. What we lack in strength of arms we make up for with not being overwhelming jerks a good 95% of the time.

There are advantages to just doing one race, as ME1 demonstrated with multiple backgrounds. Inquisition's multiple backgrounds were dropped once the switched to multiple races. So, there are definitely pros and the ability to go a bit deeper into role-playing.
