I was wondering if I were to train this feat would I do more damage with balanced weapons in my off-hand or does that not make a difference?

Double Weapons Including Double swords(think Ajunta Pall's sword) and Double Lightsabers will positively effect by the Two Weapon Fighting Feats and they do the most damage.

 

 

Two Normal Swords/Lightsabers due the second most damage.

 

One Long Sword/Lightsaber and One Short Sword/Lightsaber Shoto will be the most accurate.  

 

 

What class combination are you aiming for? High Strength will increase Attack and Damage for both Swords and Lightsabers.  High Dexterity over Strength, Lightsaber will have increase to Attack as well to Defense.

 

 

For Example, +20 Strength will have +5 to Attack and Damage.  +20 Dexterity(as long as it is higher than your Strength) will have +5 to Defense and Attack.
