Does anyone know where I can change the damage reduction granted by Dragon Shape from 40/+6 to 40/+5?

I checked polymorph.2da, but there seems to be no relevant column there and I see no script related to Dragon Shape in the toolset, either.

the polymorph.2da should have columns for creature weapons and other things, the DR usually is applied via the hide or skin applied by the blueprint called in the HideItem column.

In this case it is the claw, not the skin.  And the claw is not in the palette.  You need to either include it in the palette or edit the blueprint directly (or change polymorph.2da to use a custom claw).
