DA: Alistair and Solas, for different reasons. IMO, Solas is one of BW's best characters overall and his romance adds so much to his character and changes the tone of things afterward. Alistair romance is realistic, sweet, complicated, and he's adorable, awkward, and caring. And he grows.

ME: Liara all the way. Also one of BW's best characters, and ME's best character. (in my opinion, of course).

Dragon age: Hmmm.... this is a hard one 'cause I like the romance with Alistair, Blackwall and Dorian... I'll go with Alistair.

Mass Effect: Liara/f!Shepard.  Can't picture Shepard with anyone else, and can't picture Liara with a m!Shepard.

Mass Effect  Miranda although it tails off in ME3....along with...well everything else

In the DA series I liked Isabela, and that's about it. Actually, Leliana in DA:O was good too but I did not find her very compatible with myself so I did not go there.

 

I am pretty lukewarm about the rest.

DA - A trio of elves. Zevran, Fenris, Solas. I am hard pressed on who is my favorite, soooooo not gonna choose.

ME - Thane.

(I actually liked a number of other romances throughout both series, but these were the ones I spent the most time with, and the ones I always went back to. Plus, they have traits that I personally find attractive, outside of the type of PC I am roleplaying.)
