I've (so far) done Solas/rogue, Cass/rogue Trevelyan (a dashing rogue for the romantic seemed appropriate), Cullen/mage Trevelyan and I'm thinking either Dorian/warrior Adaar or Dorian/mage Lavellan next. :)

As for the others... Sera/Adaar seems obvious. Mage if you want a little drama, not if not. I like the idea of Blackwall/Cadash given his reveal and her possible background. From what I've seen of Josie's romance it's super Disney, so any paragon inquisitor works. I have no idea if any particular combination resonates better with Bull? Possibly Adaar mage would be dramatic?

Head canon: Caitlin Trevelyan of Ostwick Circle and Cullen. (I was going to go with Maeve to reference the old Irish legend, but as it's my daughter's name I suddenly was thinking... maybe not)

I do like the touches with a mage character. Though I would have also liked to have seen a little extra with any player who goes through the Envy Demon, since it is something they have in common

Spoiler

I also know some people have called Cullen's romance Alistair 2.0, but while there are some surface similarities (former templars, physical appearance, a little uhm... uncertain about romantic relationships). Cullen's a great deal more hard edged in some ways. His sense of humor is also VERY different, and he has to be reminded about doing things like er having a life outside being Commander Cullen. It's one of the reasons I not only love the chess sequence, but the Wicked Grace game too. Especially since he complains about it at first and then gets a little too into it (I want to know that story thought. heck I want to know the Inquisitor's story!) I also would have sold my cat to Bioware if they'd added some romance lines for the characters in that.

Heck, I just want more scenes like that in general... Wait, this was about romances right? Yes, this was being silly for a moment.

But seriously, what got me was the post Arbor Wilds scene for Cullen

Human/Female/Mage and romanced Cullen, then I played a Human/Female/Rogue and romanced Blackwall. Recently I've been hooked on playing a Female/Dalish Elf/Mage/Rogue who romances Solas and I think that one's won me over the most. I find it the most realistic and relatable, and see it as a chance for my Lavellen to grow and mature.

I loved Blackwall and Sera's relationship with a female Dwarfquisitor -- he has the whole murky past/Warden/beard thing going for him and Sera just goes on about how cute and smooshy Cadash is. It's adorable.

Cassandra - Human Mage.

I always play as human and I felt like mage fit the Inquisitor best. I romanced Cassandra for purely aesthetic reasons--I think she's one of the most of the most physically beautiful BioWare characters ever. I do find Dorian and Josephine more attractive personality-wise, but whatevs, I make it work.  :D

Solas/Dalish mage it takes some headcanon to get them from 'modern elves bah!/FU' to the Fade kiss but they add a lot to the DAI story.

Dorian/Trevelyn!Mage it's a lovely fairytale of a man meeting his prince Charming and them being handsome mage nerds together.

Human Mage and Cullen, for me. Granted, it's the so far first and only (though I plan to try many different combinations in the future; my eye's on Dorian with another human Mage next time) romance I've tried, but there's something about it which really grips me. I'm playing my magey according to the backstory that she didn't much dislike the lenient circle where she was brought up and actually had a crush on a templar in the past already. Cullen was very much her type, and his personality drew her in. The adorable way he flirts with the crush and then the passion behind the scenes (the one in the garden comes to mind) with him just... It's everything I want in an RPG romance, with just enough drama added in to keep it interesting.

Went with a different history in the keep for this playthrough, but my original (and 'canon') Warden was an elven mage who tried to flirt with Cullen. I thought it was kind of cool to finally be able to have a mage character romance him, but I didn't expect to find the romance as enjoyable as I have so far. I almost expected it to be too rife with mage/templar disagreements... then again, my mage decided to choose the templar side, because the mage quest didn't sit right with her (for spoilery reasons). No clue if that makes a difference in how the romance plays out...

Since people are explaining their reasonings, I prefer Trevelyan/Dorian because Dorian's had an awful lot of heart ache regarding sex and romance and I love the idea of him finding his Prince Charming rather than a smuggler, mercenary, or nomad.

I agree with you completely  :D

Male noble mage (moderate Andrastian)/Cassandra

Male dalish mage (elven pantheon)/Dorian

Female dalish mage (elven pantheon)/Solas

Ofc, i rarely play as a warrior or a rogue. (Maybe, in Tevinter as a templar... ;) )  I dont like playing with a female char too, but Solas seems interest.

So far:

Blackwall/Cadash - This is an awesome combination that really works with Cadash's carta background.

Dorian/Adaar - "Hey, dad, good news! I found a powerful mage I want to spend the rest of my life with! Of course, there might be one or two problems with producing that Pavus heir ..."

Josephine/Trevelyan - My human warrior was a sword-and-board warrior, very much the 'knight in shining armor' type. The duel scene worked perfectly for her.

Solas/Lavellan - Well, obviously Lavellan is the only option here. I went with mage. While I can see Solas and non-mage Lavellan producing interesting results, it does get an extra layer from the two of them sharing a love of magic and the Fade.

Sera/Adaar - A little obvious, perhaps, but watching Sera fall all over herself because Adaar is so hot is delightful :D .

Solas + Mage Lavellan. Technically the reasoning was simply that I always play mage, but it helps that they get the best flirt.

Haven't played the others, I'm not interested in any of them.

Cassandra / Human Warrior. From my perspective, Cassandra is a tough girl. She's not afraid to throw a punch. She's not afraid to do what's necessary, even if that means wading in to a horde brandishing a sword in hand. That there is no doubt. But, I think beneath that face, she wants a knight in shining armour. A saviour. A person whom she can go unguarded beside.

So why a warrior? I personally see warriors, as opposed to rogues, as being a lot more honourable. Now that comes from years of film, TV and literature that supports that, but I'm not saying it's fact. It's not. To me, a warrior is the best match for Cassandra, because she values honour and loyalty, and has a desire to defend.

The perfect match up for Cassandra? I would go with Rhaegar Targaryan from A Song of Ice and Fire / Game of Thrones. A warrior and a poet.

I've done a bunch.  My "main/canon" run, which I am currently playing through and "finalizing" now, is a male Human Mage, romancing Josie.  The idea is between coming into his magic later than is average, and the Trevelyan having a fair amount of political clout, he still spent a lot of time outside the Circle and thus still has the kind of political sense one might imagine from a Human Noble.

I have also done played to completion:

Female Elf Warrior + Solas

Male Human Warrior + Josie

And just a whole mess of other combinations that I never finished because short attention spans, and stuff.

Playthrough #1: Human Mage with Cullen.

Playthrough #2: Elf Rogue with Solas.

Playthrough #3: Dwarf Warrior  with Iron Bull.

Playthrough #4: Elf Mage with Blackwall. (I would have done a Qunari but I was on nightmare and I read somewhere that elf mages had a perk for ranged defense.)

Favorite? My Cullen and Solas playthroughs. I like being a ranged character and equipping tanks.

EDIT: I feel like my Rogue Elf with Solas is canon.

I like Sera with mages of any race, for the same reason I favor mage!Hawke with Fenris. I just like the dynamic of learning to trust and care for someone who falls squarely outside your comfort zone. I like her with qunari best (dat size disparity! Fehe) but the class difference angle with Trev, the birds-of-a-feather thing with Cadash, and the drama llama ding dong of Seravellan are all entertaining in their own way.

I love Blackwall/Cadash because you can play their romance as a couple of sad little ex-criminals desperately trying to atone for their past. I love redemption arcs. The "happiest" Trespasser ending with BW's romance plays into this, with the two of them visiting jails and inspiring criminals to change their ways. I also like him with Adaar because Rainwall seems like the type of guy who can handle a whole lotta woman.

I like Dorian/Cadash because I love the idea of a man from the magiest society in all of Thedas falling for the world's first magical dwarf. Also, Dorian can just flop down and rest on Cadash's head when he's tired. And dorf men have muscles. (..........sshhh I have a weakness for arms tell no one)

I like Josie with qunari or dwarf dudes because she's so teeny and they're so manwy.

Ummm. Oh gosh. I have tried several.

Female Lavellan/Solas (without vallaslin, chose not to redeem Solas)

Female Lavellan/Solas (with vallaslin, trying to redeem Solas)

Female Trevelyan/Cullen

Female Trevelyan/Blackwall (discontinued, because I chose the wrong dialogue option when the choice symbols were not showing)

Male Lavellan/Dorian (in progress but proving to be a unique experience seeing as how I've never even tried homosexual romances before)

If I had to give my top pick it would be Solas, but I have to admit that Dorian may be contending him for the spot. I'll have to wait and see. But thus far, Solas is the only one who has elicited the most emotion out of me. Others have come close, but not quite like Solas.
