It's all how you look at it. Jedi use the force for selfless reasons. Sith use it for selfish reasons. But both use it, or try to, to the fullest extent of said side. I'd argue few could sit in the grey and be proficient. Otherwise most are a jack of all trades, master of none. 

 

It kind of depends on the nature of the force. Star Wars tends to show Jedi/Sith as being very black and white most of the time(at least in the movies).

 

I'm not sure if that's because of writing, or if there is a canon reason that makes it difficult to not fully succumb to the dark side once you start down that path.

 

Because in reality, most people aren't pure light side or pure dark side.

This is one of the reasons why I like KOTOR 2 it shows that both the jedi and the sith are equally flawed and Kreia does a good job pointing out those flaws.

It's the writing of the movies. And it's influenced EU. Considering the movies were made with younger audiences in mind (not necessarily kids movies). It's better to have your good guys GOOD. And your bad guys BAD. Thank George for that.

Yes but within the confines of the movies and later EU. It gets more black and white. But that's partly why I like tor era EU.

I don't think the Jedi were portrayed as all that good in the movies mainly because of their pride and dogmaticism.
