So what happens to Leliana and Cassandra if you chose Viv. in the end?
Where do Leliana and Cassandra's stories go if you chose Viv. as the new Divine?

Leliana probably remains spymaster, though if she was romanced by the Warden she had plans to drop it and return to them, so she may leave for that.
Cassandra probably still rebuilds the Seekers. Not sure what she does if the Inquisitor made her do otherwise.

I'm not sure we're going to see them again any time soon. It might make sense for them to fast-forward 20 years or so to allow them to appoint a new Divine (the same one, no matter who the Inquisitor endorsed). It would allow them to respect player decisions without having to deal with divergent realities.

I imagine Leliana remains the Inquisition spymaster and Cassandra rebuilds the Seekers...
... another reason why Vivtoria is my preferred ending, really. They all fill the role I think is best for them.

It's a weird choice, right?
I think they just wrote that in so that they didn't have to deal with the issue of both of them "leaving" the Inquisition.

It's very weird! I thought Cass would be her first choice, given how well she served Justinia and how well they get along in general.

Maybe Leliana's bloody cleansing would not have met Cassandra's approval and she knew that. So to avoid making her friend an enemy, she refused to have Cassandra as her right hand.
Or maybe, if Cassandra was romanced, Leliana didn't want to break up the happy couple?

No, but it makes sense considering Leliana's pro-mage tendencies and Cassandra's more pro-traditionalist bent.
It also makes sense due to the resolution of the Leliana/Justinia angle. In the end, Leliana suffered for being close to Justinia - in some ways, her affection for her mentor took her down a fairly dark path. I can see her trying to spare Cassandra the same fate. Which is not to say Cassandra would view Leliana as Leliana viewed Justinia, but it's likely Cassandra would be less objective with Leliana as the Divine as opposed to someone she was not familiar with.

Nope, I softened Leliana, but she still didn't want Cass, and it was a Solasmancer, so no romance involved. I agree with Arisugawa, I think she might hesitate at recruiting Cass because they are friends (remember that Justina regretted what she'd done to Lel).

She did imply that she might not want to work with a different Divine, and noted that a new Divine might not even have her for the position.
I was more surprised at Leliana turning down Cassandra's offer than if it had been the other way around.
I'm less surprised when it's hardened Leliana. That person is never going to trust anyone again.
