I've had Inquisition since release, however I stopped playing because it became really dull (40hrs in). I am now trying to get back into it, but i am about an hour in, I'm still pretty bored and dried out. I'm beginning to feel like its my second job, hopefully reap some benefits. I'm level 13 started doing the main quest (which was keeping me entertained since i love the story) again but now im at the point where enemies are several levels ahead of me, I would really like to beat the game at least, but the way things are going it seems as if it is not going to happen. Any suggestions?

Try not to do every single quest in each location you visit. Save the higher level ones for later, like in the Hinterlands. Spice things up with the dialogue options, try a different fighting style or choose companions you don't usually play. Pace yourself. Do side quests to get to the recommended level for the main quests, then do one of the main quests, level up some more for the next main quest by unlocking new areas once you get to Skyhold and keep that pace. Talk often to your companions and do their quests too.
I've been playing it since January and I always find something new to have fun with.

Games are like farts. If you have to force it, it's probably ****.
Go spend your time on something you enjoy doing.

If you really don't want to play the non-story quests, try to play the minimal quests, e.g. companions quests, the regional quests (i.e. like the Fairbanks questline) and close the rifts. These quests are much more interesting than the other fetching quests. You can also earn yourself an agent at the end of the regional quests. Most importantly, you earn power upon the completion of these quests. 3 per companion quests and 2-3 from closing each rift. Then, I recommend you to play the main quests with casual difficulty and try to play as an archer or a mage. This is the easiest way to play the game as the archer deals high damage while remain relatively safe and mages can barrier yourself non-stop. It is possible to complete the game ard level 14. Though you would miss the epic dragon fights as they may be too hard when you are underleveled. Try not to exhaust all the convo options with your advisors/companions so you can go back to talk to them when you are bored. Hope you can at least enjoy the story this way!!
