Hi mate, I played as a Human Male Templar as my second plythrough and it was really fun.
You can do whatever you want and everything can be viable, but if you are playing in nightmare it will be tough to stay alive at the beggining, so focus in a good armor, health, etc. I started as S&S, it really gives a lot of defense early game, just by having a shield and with some talents in the S&S skill tree.
As soon as I reached level 10, more or less, I started being 2 handed templar, which is very fun.
Lategame my tactics where "DO NOT THINK, GO AND BURST THEM DOWN". Of course I got killed, but that meant and AoE heal for all my party, and my mage had revival ready for me. It was fun and brainless, and also very damaging with the Wrath + Purge combo.
So Id say focus on defense early game, go nuts mid/late game if you want.

Critical chance because of flow of battle passive is key to understanding 2H combat. It will reduce your cooldown to such an extent you can almost always use your abilities. Because of this, it's imperative that two things are understood.
1) Cunning is a horrible stat and should never be slotted....ever. It gives a horrible return of 0.5% crit chance for every point of cunning. You're better off with slotting dexterity which gives 1% critical damage for every point of critical chance. A better source of critical chance is from offensive leather slots (as opposed to utility).
2) Because of #1, you will be semi limited on what 2H is ideal for critical chance. Fortunately you can get the jagged battleaxe schematic almost immediately from the vendor in Val Royeaux. Unfortunately the tier 3 axe (whose name eludes me) you will want to farm in the cradle of Sulevhin.
And although the OP was more concerned with crafting, I must also stress the value of an upgraded charging bull when paired with the Templar. Wrath of Heaven ability is very expensive. If you prime it with an upgraded Charging Bull, it costs nothing. This allows you to easily use wrath of heaven followed by spell purge, and you still have juice to use afterwards. Use Charging Bull a lot, because every time you do, it makes the next ability free to cast. Try to prime expensive abilities with charging bull.

Axe of the Dragon Hunter schematic at the Black Emporium. Best 2H weapon. Can add a masterwork, a pommel, a haft, and rune on top of the ridiculous amounts of both metal and leather the schematic calls for. Expensive- but worth it if you are going 2H.

Are you sure about it? I think the axe is unable to add a haft and pommel?

He's right about the Axe being up-gradable.
