IMO it depends on the fight or zone you're in. You could do a fight then reload and do the same fight again with a different mage to see which one you like better. Maybe try that if you can't decide. There's no reason you can't change up your group for different areas too. You might want Solas for elf temple or ruins. You want Viv to recruit that enchanter chick in Hinterlands, etc. Also last night I saw my wife do Fallow Mire with an all mage group. She's a rift mage, took Solas, Viv and Dorian and took the place down hastily. Nobody running into the water to bring out the dead and what came never made it in range of the mages. Dubious group, I know, but it really worked.

I would say it comes down to role-playing more than anything. Which one do you want to have around?
Both can support your team fine as far as abilities go. Either way, as the only mage in the party, I would take them deep into the spirit tree and then pretty much all into their specializations. Vivienne probably helps slightly more on the party support side, where Solas is a maybe a little more damage focused, but to me it's really six of one vs half-a-dozen of the other.

All of the mages are good with the right build and playstyle. Since you are a sword and board templar I would echo the recommendation for Solas. He is a good mage to have around. Prioritize his upgraded Stonefist and Prioritize and Upgrade Veilstrike, that will keep him applying weakness. You can manually trigger Pull of the Abyss when you want everything in a nice pile. Veilstrike is nice for a warrior since you can take talents that increase damage vs knocked down foes. It will also help mitigate damage you take. Also Solas has the mana to use Winter's grasp often. So take some of those nice frost talents and you get to have fun with Shatter!
I don't like Vivienne, she works but it is fun to maximize synergy and she provide much synergy for a warrior.

If you're going Templar then hands down 100% sure Vivienne is a must have. She's the only mage who will reliably cast resurrect. I played a heavy Templar 2H though, and so I would frequently die (which was AWESOME considering the huge templar damage buff the party gets). Viv would instantly cast rez on me. The reason Viv works is because her corner stone spells are cheap. Plus she stays in melee range so frequently I get barrier. She's very durable as well.
The problem with solas is that for a rift mage to really shine they need to put weaken on targets and then do some damage to keep their mana regen going. The net result is that he'll have too many active spells and will rarely have rez ready to be used. Plus I find he dies a lot. I prefer Solas when I play a ranged character.
I was able to finally get Dorian to work almost as good as Viv (in terms of reliably casting rez the second you need it) but I had to pretty much forgo the necromancer tree because the spells are too costly.
With Viv, spec her to KineticGTR's Knight enchanter 2.0 spec and put spirit blade, barrier, and rez on preferred.

Both work very well, and can be tweaked a lot in and out of the specialty to do just about anything you want (except that Solas can't heal and Vivienne can't rain fire.) Their talents do a lot of the same things, different ways.
For me, it's a question of who you want in your party for story reasons while you're doing certain quests. I'll bring Solas through the Plains to experience one way of looking at them, and build him to deal with it as I need to, then I might take Vivienne to the Graves and she evolves differently, or vice versa. Dorian gets brought along too (for me, more than the other 2, because I like him,) and does fine. I just don't bother with his walking loot ability anymore, which helps.
Playstyle might have a lot to do with it. My templar was my Dorian romance and the other mages seldom left Skyhold, but I never felt like he needed Vivienne around for healing. Better armor sometimes, yes. The lower left passive on the templar tree has some sort of contingency plan if you get KOed anyway, doesn't it? I do remember having to have someone run over and revive him once or twice,though, so it's not perfect.

Vivienne's specialization turns her into another melee character. You do NOT want 3 melee characters in your team. It'll make the game boring as hell (unless one of them was DW Cole, who can finish enemies very quickly).

Interestingly enough I have the complete opposite opinion on this. Vivienne barrier is most effective when most of the group is melee because more often than not barrier hits 2+ people. I prefer Solas for primarily ranged groups.

Often if i'm Rogue ( archer) and i hunt dragons i bring a warrior ( Blackwall or IronBull ) , Vivienne and another mage , Solas or Dorian.
But then i have to switch to Vivienne frequently to have her use Spirit Blade (and Fade Cloak to reposition ) non stop against guard .
That way i have 2 range and 2 melee.
(plus i get the impression the AI handles rogues better than it handles Vivienne ). But in the end it depends if you don't mind playing an alternative character or want to remain fully committed to your inquisitor.

For Dragons and boss fights, Vivienne. For fighting with anything else, Solas because of Pull of the Abyss.

I find Solas is the best companion mage, mainly because Rift mage talents are extremely useful. After that, I prefer Dorian to Vivienne. I use the focus abilities fairly rarely, and didn't even spec into Revival in my last run (nightmare, FF on).

Vivienne, best Barrier and Ressurgerce is one of the best focus skill in game.
Not really. Ressurgence becomes largely useless the moment your items are half-way decent, Fade-Touched Silverite or Snoufleur skin and you never go down in the first place.
Go Solas, if you're worried about dying from time to give him the Spirit Revival spell. Also Static Cage, Firestorm and Mark of the Rift stacked on each other make for some hilarious damage.

If you're only rolling with one mage, definitely Solas. Rift Mage kit is just the best team-player overall.
