Fast growing fungus, molds, etc.
Life forms that aren't purely plant or animal, but perhaps have characteristics of both (or neither).

Perhaps the latter type mimicking your crystals since it would be difficult to make inorganic compounds "react" to movement...from a plausibly stand point.How about... a world covered with crystalline structures (growths) that would change as you walk by.

Zombie planet orbiting a pulsar. Picture is from NGC. Don't ask about the extreme radiation, we got ...radiation shielding or something.

A rogue planet would be interesting, haven't had one of those yet IIRC.
A thousand times yes! There are billions of these planets wondering our galaxy!
It would be cool to find one that once had a thriving civilization. A lonely empty doomed world.

I would like some futuristic planet with highly developed civilisation , technology and infrastructure , something like Coruschant city from Star Wars (but we could say that Thessia or Illium very close to that)
Also I would like to visit some planet with pre FTL and pre industrial civilisation with a beautiful nature and environment , also that civilisation could see the crew of our ships like " gods" from which will originate some local myths and eventually religions.
Snowy and icy planet would be nice with a cities beneth the ground (like Andorian moon from Star Trek)
Planet full of myths , temples and monasteries inhabited by civilisation with a strong sense for religion and spiritual life , some civilisation for which the religion and spirituality would take a central place in their lifes ( something like Bajor and Bajorans from ST : Deep Space 9)
Water planet , with a cities and developed architecture beneth the oceans.
Some planet covered by jungles and woods (home of some reptilian species)

Perhaps some more "Ghost" planets similiar to Illos, Haestrom, some of the Galaxy map planets, and Tau Volantis from Dead Space 3 where the previous civilization has dissapeared and all that remains are ruins of that civilization. Could make for a couple creepy/mysterious explorations as you attempt to navigate the ruins, discover who used to live here and what wiped them out.
I think we got that one covered.

I'd like to explore planets with a Bladerunner/Coruscant like urban sprawl/cool beautiful futuristic cityscapes with lotsa hustle n bustle, dodgy dealings, seedyness, dark vibes, dense traffic, lotsa npcs & verticality etc.
Or i'd like to explore planets with all jungle with deadly vegetation/or all ocean with massive unknown creatures lurking in the deep waiting to be discovered.
Or explore a planet with low gravity & different atmospheres effecting the gameplay.
Or explore a completely subterranean planet. With claustrophobic tunnels & cave systems
Or maybe a planet that's entirely the remnants of a bygone ancient civilization.
Or maybe a planet that's entirely in the sky
Or explore a planet of giant man-eating spiders/sworms of insects everywhere.
And since its in a completely different galaxy i'd like to explore some planets where the laws of physics as we know them don't apply and things opperate completely differently to what we'd expect.

I would also love to see a planet like Virmire again, with clear water ponds, Sandy beaches and sleek designs for a potential cities or reservoirs.

I'd like to see worlds with dynamic weather. I don't really need a day/night cycle, but having it suddenly downpour, or have a sandstorm or something of the sort would be kind of interesting. More than that, I'd love to see active mining operations, properly populated colonies with NPC's we can interact with, and of course less savory elements that we can deal with in a number of ways, either through bargaining, or with the business end of the cut scene pistol, etc.. I'd like to see a properly lawless environment where rogue human or alien groups take advantage of settlers.
As for the actual planets themselves, I'm not entirely certain about my preference for specific planets. ME1 covers a lot of different environment types, from frozen tundras to desolate wastelands and the occasional garden world. I'd like to see them get elaborate with some of their garden worlds. Virmire was actually pretty nice for what it was. I'd love to see a planet like that done in the new engine on PS4/XBone.

Tnx , I want to see that never seen before , for example like some water or snowy planet , where some giant base (like a platform) with a landing zone (like airport) emerges from the ocean , open the gates to pick up the air crafts , then closing the gates (roofs) and goes back into the depths of the ocean again untill the next take off to the space.
Like some giant mobile underwater base which can emerge from the water like a lift.
Also from ME4 I want more philosophically oriented game that makes us wondering ourselves (while we do explore the space and other worlds) who we actually are , are our ancestors came from somewhere on Earth and from where , why do we exist at all , what is our purpose..........etc , I do not want some generic SF shooting game where we are going around and killing some monsters and some creepy creatures.
edit : we have the same cat , only mine is dark gray : )

The funny thing is that I almost said what VesperVN said and remembered Mars and decided just to let it implied. The storm in Mars does look similar with the one in Mad Max, the difference being that in Mars it's just background, in Mad Max you go through it, and it's indeed spetacular.
That's the kind of thing I want. Stuff that we can recognize, but pushed to lengths that are only possible in different planets.

I can not see the picture at work but after reading the above post I'm led to believe that you posted a pictures of Mars in ME3? Yes, that's a cool looking sandstorm but it's in the background and we can not see inside it, be inside it. I want it to be part of the map or mission.
