So far my favorite romance has been Iron Bull. It just hits all the right notes for me.

Here's my take on each.
Sera: She was my first romance, I enjoyed the spontaneous air around her romance, but I was an elf then and was taken a bit back by her ultimatum in the later game.
Still enjoy the romance but I had to stretch my own roleplay ideas to really make the romance work, it never felt extremely natural to me.
Cassandra: I really like her romance. I was a devout Dwarf when I romanced her and was happy to get a comment here and there about that. I was lucky that Vivienne turned into the divine that game so it did not end in heartache. Cassandra seems like a natural fit for a devout male character.
Josephine: This one was a bit too cute for me. I get that is what the writers were going for and I appreciate her princessly charms, it was all just a bit too fluffy for me. I dislike saying cliche in this case since it was clearly the direction.
Dorian: I quite enjoyed his romance but did not think extremely much of it overall. It feels genuine in the delivery between the Inquisitor and Dorian actors and is quite amusing in terms of dialogue.
Iron Bull: He's a 50/50 for me. The best part is that I feel like this is one of the better romances in terms of development and initial delivery. He is clear about the intentions from the beginning and this "thing" then develops on in other scenes. A criticism i had with Dorian was that I felt like I could fully romance him just after I had met him intially.
Solas: So this one if fine. I must admit I don't actually think anything in particular about it. He has some lovely scenes, but I just couldn't really get into the relationship itself. Maybe it's just because I am a straight dude and don't get it, but Solas just didn't seem that attractive to me to begin with. I feel like your initial friendship with him should have had room to develop before the opportunity to develop feelings for him.
Blackwall: This one I'm kinda "eh" with. I like his character and he doesn't seem like an unattractive fellow, but after the 10th time he said "I am not worthy" I was just abotu ready to either slap him or leave him. He does have his moments though when he isn't full of self loathing, his open adoration for the Inquisitor is nice.
Cullywully: So as I mentioned he is my winner. I would not say he is the absolute bestest at everything but I feel like he scores high marks in all fields: You have plenty of options to flirt with him, the relationship seems to progress very naturally both as a friend and as a flirt, he is in a content mood with the Inquisitor as a partner and a professional despite it. He has a lot of really sweet scenes and has humor to ease up the mushyness a little bit. It feels like the most genuine two-way relationship.
Blackwall's romance is more pure and real. Not too sex related.
I agree with those who said Cullen's romance has just about the best pacing in the game. I've watched all romances on youtube, and I like Cullen's buildup the best. His romance imo captured the most natural friendship to romance progression.
He has very good cutscenes that have just him and the IQ getting to know each other as people (chess+lake, lyrium drama for extra juice) Some of the others felt a bit too "flirt here and there then bang zoom, confrontation" or too much 'Inquisition business talk".
I also liked how Cullen's romance had a very nice even mix of things: cute/fluffy + funny/derpy + sexy sex + angst + heart to heart real talk
I have done 4 romances so far (well 3 1/2 - technically not done with Dorian's).
Cassandra's and Dorian's are both strong.
Solas' is thematically and plot strong but has little actual romance content. (More interesting as a plot device for future games than inherently rewarding on the romantic front).
Iron Bull's is good for a few laughs and little else.

Solas and Blackwall are really good too.
All of them are great. I especially thought Sera's was superbly done. I think hers is the most developed. If you literally want a Disney movie, try Josephine's, which is adorable. Solas is a great, tragic, and complex relationship. I also liked Cassandra's, because she doesn't turn into a "softy" as you get to know her. As she says and clearly believes, it's about passion and the pursuit of an ideal and she takes those she cares about very seriously. I liked how that broke the archetype.
I really liked Dorian's because it seems like it's all about sex - because that's all he's ever had the chance to explore due to his Vint heritage - but it turns into much more than that. I liked that you could simply hang out with him instead of simply sneaking makeout sessions in your quarters, although a brief cutscene for those would've been nice. Still haven't tried Blackwall's yet, though.
Solas. But Sera is great too. :3
Only romanced those two and Cassandra. I was very disappointed in Cassandra's romance tbh.
Cullen is my favorite but i also liked Blackwall and Solas romances.
Solas. Enjoyed Cullen, but he was like another version of Alistair.
