I just like the look of the class/race/gender make-ups of some of the characters. I would like to have a Quarian that isn't as squishy as Tali was, and more combat inclined; an Asari Squadmate that isn't an adept; and anything like Nyreen I like. The appearances not so much...
I find myself liking the idea of Oxford the Vorcha more each time. I like to think he has a top hat, smokes a pipe, and has an appreciation of modern art.
Squishy? Tali had the highest shield pool in the first game, 2nd highest in the 2nd game (along with a power that could recharge them off of anything with shields or barriers), and 2nd highest in the 3rd game along with 40% DR (same as James's fortification) and the ability to regain full shields every 5 seconds. If she gets downed a lot, it's because you aren't micromanaging at all and are allowing herp derp squad AI to energy drain health/armor targets, hack organics or waste cooldowns spamming drones at targets that aren't a threat, but she's always been one of the tankier characters.
But I would like a different type of Quarian squadmate, because as much as I love Tali, she's pretty much the prime example of a normal Quarian. That's not bad, considering she's a prodigy in Tech and is more skilled in her field than any other Quarian, in addition to the fact that she was supposed to be the first Quarian we encounter. However, I want one that is different in the sense that tech is a small part of their skill range, and they rely more on stealth or straight up combat. My mental image of a character like that would be a Quarian with a Cerberus Harrier like you see in MP, but that's just me honestly.
This goes for really any character, as ones that don't fit in line with stereotypes add more depth to their respective cultures IMO. Kal'Reegar was a good example for quarians, a grunt who was seemingly almost completely ignorant as far as being tech savvy goes. Then you have characters like Kirrahe for the salarians, Fortack for krogan and Lilihierax and Nyreen for turians.
They could just as easily make a quarian squadmate who is more versed in the natural/ biological sciences rather than engineering, ala Mordin (hey, they have to be good at bioengineering, considering how they grow their food on the Liveships) as they could a soldier type like Reegar or Gerrel, or even a combination of tech/combat like the two quarian infiltrators in MP. They could give us a turian for engineering/ ship's mechanic just as easily. I'd also really like to see a krogan who is in a non martial occupation. Salarian biotics is something that has as of yet been completely unexplored, though it is acknowledged that they do exist in rare numbers just like the turians. Nevermind that all the species but humans and quarians could use some more gender equality (except those who don't have them). All sorts of interesting ideas to explore before even getting to new species.

Also ED cannot be on all the time and is only effective when there is a shield/barrier or geth to drain whereas Reave can be used on any organic enemy no matter the protection. To keep ED defense up you would have to forgo using other powers which is basically the hole point of having Tali on geth missions.
Maybe it's just the model lighting, but they all seem to like cohesion and look very flat. Aside from that, a sengoku period Katana in space seems really out of place. There's more I could say, but they would be easily solved if time was taken to give more visual personality.
"freaken brilliant" might be stretching it though.
P.S. I am aware that there's swords in ME3. And yes, they seem out of place too.

Thanks for the slight correction. Her theoretical maximum is indeed lower than Kaidan and slightly lower than EDI's as well. I Forgot that ED can't increase your shield pool past maximum in ME3 like it could in ME2. I always spec all squadmates for damage or recharge in passives and never use the shield increasing armors, since hardly any of them ever die for me anyway, and in those circumstances she comes out to be tougher than anyone but James and Kaidan. Didn't even calculate the other way because I don't know why anyone ever would.

Also, ED is the most useful power against geth mobs because of tech bursts, and spamming it over and over is usually the quickest way to take care of them since it also detonates all tech effects when used on synthetics, armor and health included. Sabotage is good for primes and organic factions because of backfire priming and Tech Vulnerability. Hacking is useless unless you can't kill the enemy very fast. Neither of the drones really has much utility in this game, either, at least in singleplayer where everything dies so quickly anyway.

She does do the fangirl thing for a bit in ME2 for maleshep, much like Liara if you don't tell her off, but that's just the sort of character she is; looks up to Shepard because (s)he is a little older and more accomplished.

It's her cutesy voice that bugs me. Liara's soft and "sultry" voice gets on my nerves too after a while. I think Ali Hillis and Liz Sroka are excellent voice actresses and I believe them as characters but neither speak like that in real life so it was a design choice that, while I understand, makes the characters sound a little affected (to me). I still have a soft spot for them and I'm glad they're part of the squad and story - I just take them both in small doses.
All that being said, I've never really taken the time to take Tali on a lot of missions so maybe she would grow on me. I've only done Liara's romance once and I've never done Tali's. I've had plans to but chicken out at the last minute as soon as she says "Sheparrrd..." She sounds so young... it's creepy.

I agree completely, but I don't think that a display of vulnerablities and affections (or difficulty doing so) towards close confidants necessarily overrides her strong personality in other areas or situations, because people are more complex than that. She never really loses that directness in the majority of interactions with characters other than the ones she is friendly with (except when the narrative's stupidity requires it like in her optional ME3 death).
Liara's always a bit shy and still loves you even if you threaten to throw her into a volcano, so I don't think it's entirely comparable, especially considering that with Tali it is mostly limited to one gender of Shepard and unlike the former, there are plenty of ways to ****** her off anyway (speaking/acting kindly of Cerberus, disregarding her in the LM or Legion argument), compared to a lot of other characters.

It doesn't override it, no. I still like the character. I think they play up the girly, sentimental stuff too much though.. and didn't capture her tougher, more cunning part. They did a better job in the Homeworld comic. It made me see again how tough and independent she is. Liara could never do that (at least not that early in the story). I agree with that part, and think it was probably done mostly for her (male) fans in later games. I'm of two minds on that stuff because I think she represents a strong female character that isn't necessarily given strength by discarding everything that is considered feminine, so I do appreciate that aspect of the character. I don't agree they didn't capture the tough, direct and cunningly savvy kid that we met in the first game later on, though they stopped emphasizing it as much. It still shows through for me in later installments, though not as often as it should IMO. You have to bring her on missions to get a lot of her better lines in that regard.

I chalk it up to quarians not being a monoculture. They are clan based, and it isn't unreasonable to assume that there are differing dialects of Khelish just as there are for virtually any other language. Most of the inhabitants of the Rayya (Tali's birthship) tend to have a similar inflection to her, for example, as does Rael'Zorah.
