You can mod your saves with Gibbed just like the PC Master Race, you just need an extra converting dealio to go back and forth I think.

Reminds me of one of the easter eggs in Jade Empire. One setting in Lord Lao's Furnace would temporarily switch your character's gender to the opposite. If you had your LI with you, the facepalm look he/she gives you was pretty funny.
I'm assuming Samara and Morinth don't count either, but there was Kelly Chambers (bisexual).
Liara can be romanced by female Shepard. Liara is technical female.

Presumably, there is still room for either of them to still accept a Shepard of the opposite gender if they were still physically and emotionally attracted to them, considering that they are attracted to Shepard no matter what gender you choose.
For the hetero only options wherin the gender identity or sex of their partner is a primary element of their attraction, such a change would probably have greater and more final ramifications. Of course, it's just speculation on my part.

The statement wasn't "gay only" options, but "gay romances". If Female shep and Liara are in a romatic relationship, then it is homosexual by definition.
Using the criteria of bisexuality to exclude the idea of "gay only romances" would make the discussion moot since the playable character/protagonist is inherently bisexual as they are free to romance any sex that the player sees fit to engage. So there is still room for a Shepard of any gender to accept a love interest of the opposite gender.
Also, if you romance Liara, she isn't "bisexual". If you romance Liara in any capacity, I am not aware of any conversation where she reveals her sexual orientation. If that is correct, then one has no basis for assuming that she has any other sexual orientation outside of the context of that world state. Therefore, if FemShep romances Liara, then Liara is a lesbian since she does not express any sexual attraction to males.
Look at it like this: Either Kaiden or Ashley can die in Mass Effect. If they're dead, they're dead. The characters in that world state know no other reality.

I was using the Shepard as the variable. The potentialities I was referencing was how heterosexual only LI's would react to such a change, IE someone like Ashley, Garrus, Jack, Jacob, Tali, Miranda, Thane etc, not if Shepard would still be willing to continue the previous relationship after gender reassignment. Shepard is inherently bisexual via game mechanics, but not all of his/her LI's are no matter what "world state" we are discussing.

I don't think Bioware will touch sex changes in-game anytime soon.
You'll more likely to see that sort of thing in Saints Row, I'd imagine.
Its a pity, too. The first two Saint's Rows were decent games.
