I feel like this should partly depend on the nature of the party and its purpose, but while I like Sten's deadpan, I enjoy Iron Bull's enthusiasm when it comes to helping me kill things and raid strongholds.

Sten VS Iron Bull

What Qunari companion would you rather have in your party? Both are great characters with good writing. Both are excellent warriors worthy of the commendation they are given and both can be good friends to there party leaders. But who would you choose?

I prefer Sten.

Iron Bull is a good off-tank but he reminded me too much of Isabella - a walking petri dish of STDs :P

What a terribly rude thing to say!

Iron Bull. I started leaving Sten in the cage in my latest DAO playthroughs. He's bit boring as character.

Sten, easily. Iron Bull was too "bro" and too relatable for a race that's supposed to be as foreign and confusing as the Qunari.

I found Sten more interesting over time. Iron Bull less so.

If I had to choose, I would say Sten without a second thought.

I really love how he slowly gains respect for female Warden. Conversations with him were interesting... and confusing at times. My Warden felt like facepalming every time he started one of his stories. But that's one of the reasons I like him so much as a character.

Bull is good for drinking and fighting (or talking about) big monsters... But except from that... *shrugs* He's just "ok", nothing more.

I am not as anti-Qunari as many folks but I did not care for either of them. Bull was easier to get along with, though I did not like his frat boy character. Sten was a better character, but I disliked him, and he was clearly pretty incomplete/rushed.

As regards the tank comment, you have much better luck with him than I do.  I made this awhile back to vent my frustration over him being about the glassiest tank I've ever come across.

Sten, on the other hand, well, let's just say you better hope to never meet him on a mountain pass ;)

I prefer Sten because he is a realized person. The Iron Bull is more juvenile in that he's in a "journey of self-discovery" finding out what his priorities and loyalties are, trying to define himself. Sten already figured all that out and what we see is the result. Sten's development is not about figuring out stuff about himself; rather, it's about figuring out stuff about the world around him.

Sten's voice also.

Iron Bull feels less a Tank and more a Scrapper, to use terms from my avatar's game. Iron Bull feels best used in addition to an actual Tank like Blackwall, in terms of complimentary specialization. If you want Bull as the Tank I'd suggest base powering him as a sword/shield-vanguard, then after that picking powers purely for getting a complimentary passive in a different sub-class.

Sten really grew on me the more I played DAO but I'm still going to have to go with the Iron Bull. I thought it was really interesting to finally meet a Qunari character that, while still being a member of the Qun, was a bit more humanized and relatable. I thought he brought a really interesting perspective of the qun that we hadn't seen before.

Gotta build him right and give him good gear. Sometimes he'll take a beating but that usually when I am not paying attention. LOL!

Sten easily. Was very pleasantly surprised by his character. Quite funny in an unintentional way at times as well. Hope he is a big part in the next game. One of my favorite characters in the series. Do like Qunari with horns for appearance sake though.

How could anyone like that no personality Sten who didn't really make much of a case for the Qun, unlike Bull.

Sten is the Arishok.

That makes him one of Bull's three Big Bosses. . .Also Sten's not an ass.
