I am doing Cassandra's Unfinished Business quest and am at Emerald Graves. According the the Wiki page, this area has spiders. Will I run into any on my way to finding Jepler the Unbound or are they in particular areas like caves?

No, you won't. There it's only one spider in the Emerald Graves and it only comes out when you finish a side quest. Drawing a blank on the name of the side quest.

EDIT: 'A Lover's Promise' is the quest that ends with a giant spider.

I cannot for the life of me figure out how to get to the area where Ser Hildebrant is.

Start at the Ghilan'nain's Grove camp (you need a war table mission to get in there). Take the path that starts on the opposite side of the grove from where you entered. After a short while there is a path to your left (before the rift there) that leads to the Fens where Hildebrandt (and one of the high dragons) is.

and just in answer to the title question in a more general sense, almost all spiders in the game are in cave or dungeony areas (in my experience at least), but there are some rare times when you may find them out in the open areas.

Jaws of Hakkon is lousy with spiders, and they are not restricted to caves, they are all over the place. Be cautious if you decide to play the DLC.
