Is the dps shown their final dps given that they hit two times per strike, or do I effectively double it? I have daggers that show about 20% higher dps but they don't have the aoe double strike effect so I'm not sure which to use.

Not sure about Jaws, but in the main game, Dual Blades are almost always the better options. Until high-end Tier 2 stuff starts popping, you'll see much better results with regular daggers, because your damage will likely come from Twin Fangs, and Deathblow, and Flank Attack. Higher base damage = higher skill damage. Once you get a solid crit rate, you can use a Dual Blade in your main hand, off-hand can be higher damage for Flank Attack, and you can abuse Looked Like it Hurt, and AoE damage from regular attacks, mixing in the big stuff every once in a while.

The exceptions a DW Artificer. Played properly, you should be using as few regular attacks there as possible, so higher base damage = better.

As for your actual question... what? Dual Blades don't hit twice per strike, they hit in an AoE sweep.

Ok so on normal attacks, with normal daggers, 2 numbers fly up because it hit the enemy twice (once with each dagger). With the dual bladed daggers, 4 numbers fly up with each normal attack because I hit the enemy 4 times per swing (2 times with each dagger).

It's not actually double numbers flying up on screen. It's the attack animation of the daggers, slice high, off hand high, low, off hand low, etc. Eventually leading into a Twin Fangs-like animation.

Regular dagger's attack animation is stab, stab, downward stab, downward stab etc.

If your question is, does Dual Blade have the unquestionably better attack animation? The answer is yes. DPS really doesn't matter, that number under it, the actual damage number, is what matters. Dual Blades have lower raw damage, the tradeoff is better attack animations, AoE, and better schematics (in the main game at least). Highest possible main game dagger caps out at just barely above the best dual blade, which isn't a fair tradeoff when, as you've seen, they hit quicker, and do AoE damage.

Regular Dagger's one advantage may be better positioning in terms of staying behind a single target. That said, eventually you learn how to do it with Dual Blades too, and they allow you to cover farther distances if enemies are bunched.

So you essentially said what I was saying, just in a far more verbose and somewhat confusing way. If I tell my guy to attack once and he has regular daggers, each dagger hits 1 time for a total of 2 fast, hard strikes. If I tell my guy to attack once and he has double bladed daggers, he attacks slower and not as hard, but the single attack ends up hitting the target 4 times, 2 times per dagger. Clearly, if enemies are all grouped up, the double blade daggers are the better choice because you're hitting all the enemies in range with every basic attack, but for a single target, I think standard daggers might be better.

I think in order to actually put this to bed I'd need to be able to make 2 sets of daggers of the same tier schematic with the same materials (as best as possible), one set of normal daggers and one set of double blade daggers. With 2 sets of daggers of the same quality, it'd then be a matter of finding something you can beat up, like a druffalo maybe, and go at it with no group. Kill a couple with each set of daggers and see which set does better single target dps.
