How do I do that, exactly? I'm still pining over Kaidan and then suddenly got all flirty-like with Jacob. I was all, whoa girl, put the brakes on. For you it's only been a month or so. So yeah, how do I make sure I don't accidentally trigger something? And am I going to end up having uncomfortable conversations anyway?

AFAIK, it is fairly clear whether a dialogue option will lead to a romance or not. Even if it is not always clear, there is generally a bail-out point you get that let's you back out. For instance, I once picked an option with Miranda that led her to believe I was interested in her, but then it was followed up with an option to tell her I didn't mean it in that way. So you should be pretty safe (unlike ME1 and its stealth romances).

In Jacob's specific case I have no idea if you can ditch him later (it should be an option), because with my FemShep I didn't talk to him at all as it didn't fit her character to flirt with him at all (plus she also had something with Kaidan). Gah, I hate how FemShep is all over Jacob no matter which option is picked, it shouldn't be this way.

With Garrus you can avoid it if you don't talk to him about "We could ease stress together".

Avoid Thane's romance by not picking "I want you, Thane." during one of the conversations.

Picking neutral answers is good in any of these cases I believe :)

Well, those seem like pretty obvious flags. I should definitely be able to avoid, "I want you."

Be careful not to start a romance like this guy:

Jack: "U tryna bang?"

Shep: "I don't want that."

Jack "Then what u want?"

Later...

Shep: "Sup Jack? Wanna tell me about your problems some more?"

Jack: "**** U TRYNA BANG TALI? AAAAAAA **** YOU!"

I must always pick a romance dialogue option and not realize it, or something, because that's how my ME2 always plays out.

:) You could always just do the renegade bang with her. That way you don't have to worry about some romance later. :)

Ah. I think I see the problem.

The "I want to get to know you." option is actually the "I want to get to know you before we bang." option.  Got it now.

I flirt with EVERYONE in ME2. That's how my FemShep try to get over the pain of Alenko-rejection! But I avoid the obvious "I want you/that's not what I mean" flags with everyone. I hate that whenever you start talking about one thing and then suddenly the flirt option is up... but I just keep flirting until I reach the point where I could put a stop to it. Rejecting Jacob is easy (just keep talking about Miranda with him). Garrus isn't sure about the interspecies romance thing after the reach and flexibility dialogue and I don't want to lead him on and it was wonderfully awkward. And it feels wrong to jump on Thane's bones just after he was coming to terms with his son (the sudden "I want you" is too random). And we all need Kelly to feed our fish (and she give bonus upgrade and extra war asset and a hug.. my ME3's Shepard is in dire need of hugs).

I'm the same way. Mostly because I have to hear all of the dialogue from everyone everywhere or I will go crazy.  I can't play this game without talking to everyone and listening to all of their content. So of course...

Miranda's like: Sup?

And then Jack's like: Ayyyyy

And then Tali's like: Um. I, uh... sup?

It's great 'cause my Shep is hella ugly.

You can still choose this option. Garrus will tell you something like "I didn't know you feel like sparring Commander". Then you be careful about not choosing "Not what I meant". :)
The other option still doesn't trigger a romance and Garrus doesn't assume anything flirtious.

You can back down from Jacob's romance.

I did that when I did a playthrough romancing Garrus.

He went batshit crazy. Saying that "You backed down, but it was you who started the whole thing"

I actually thought he was gonna rape my Shep.

except for that Scene at ME3 Presidium's Cafe. See, just being nice and then BAM, you're Romancing Kaidan as a Male Shep.
