Should the Tempest have its own version of "EDI?" It would make sense for ships to have something like an AI (or VI) assisting the crew.

If they're bringing back AI they will bring back the godawful Pinocchio theme. And they're going to do it anyways, but at least I hope the AI won't be in my face all the time like EDI (and this certainly would be the case if my own ship would be equipped with an AI). It is perfectly sufficient if the ship has a VI, a program that simply does its job without trying to be a "real person" and a "squadmate".

But it can't repeat EDI's storyarc. And for heaven's sake get rid of the Pinocchio complex.
Agreed I liked EDI in ME2 but I wasn't a fan of what they did with her in ME3 turning her into a sexbot and romance for Joker

Sure. But more as a matter of lore and logic than as a character, with the quantity of interaction being around that of a VI.
For an AI character I'd rather have a vastly different type of AI. I call it a "limited AI". It's a neural net AI based on organic brain patterns. It uses fuzzy logic, does not have "databases" and can't just interface/hack anything it wants. We've done the overarching AI thing. It'd be interesting to explore this new direction I think.

The two are separate and unconnected.
For example you can have an AI all in your face that calls you out on it if you try to dismiss it as an invalid form of life. Personally I wouldn't mind seeing that.

Exactly what I don't want to see again. A computer program on my own ship that wants to be a life form.

No, because I don't have faith in Bioware's current writing staff to handle the subsequent question of the role of AI's in organic society in a tactful manner. EDI itself was one of my least favourite characters since ME3, combining a forgettable and derivative Pinnochio/ Commander Data/ literally any of the Sixes in new BSG style personality with a gratuitiously fanservice design and a cringeworthy romance arc.
However, I fully expect there to be more AI characters and more bludgeoning with the feels stick of any viewpoint that refuses to be able to see them as life forms exactly like anthropomorphic humanoids. EDI itself, less so since they will probably run from the current setting to please the greatest number of fans.
If it (EDI) were the singular thing to return from Shepard's trilogy due to immortality or whatever, though, I would rage.

Yes, I wouldn't mind some sort of AI controlling the ship. It also could be an organic entity cybernetically connected to the ship in some way, through some funky implants for example.
YES to sexy/attractive female robots - NO to simple sexbots and "i wanted to be human all my life" stigma. There is a good reason for an AI to pick an attractive body instead of some sort of abstract shape. RL examples: female voices sound less agressive/threatening, people with female avatars in MMOs are treated better/more carefully than those with male ones, humans seem to accept human-looking faces and shapes much easier when it comes to robotic beings, disembodied voices are extremely irritating in the long term.
Example for an interesting AI controlling a ship: "Nexus - The Jupiter Incident", a game from 10-12 years ago, check it on Wikipedia. A friendly AI that has its own motivations and goals without the cheesy Pinoccio story.

Why not a character like Pilot from Farscape?

It wouldn't have to be a organic symbiosis, it could just as easily be someone that is a part of the ship cybernetically, like the hybrids from the new Battlestar Galactica:

Not only would it avoid another Pinocchio AI character trying to 'be human' but it could also be the start of an interesting arc for a trans-human(alien) character. Not in the sense of "I never asked for this!" a la Deus Ex, but a more subtle approach to the topic.
