For some reason I cant get either the Paragon or Renegade options to light up at the end of Zaeeds loyalty mission, which is especially odd as my Paragon bar is nearly maxed out. Does anyone know whats screwing this up for me?

There is no renegade option, only a paragon persuade check. Check out this thread for more on how the persuade system works. Basically, the amount your paragon or renegade bars are filled is irrelevant. What matters is the percentage of paragon points you have earned versus the total amount you could have earned. If you have earned 900 paragon points out of possible 1000 points available to earn by your current point in the game, then you have a 90% paragon score. If a particular persuade check requires a 95% threshold, then it will not be available to you.

Either do the mission very early in the game, as soon as you max up your passive skill to give you a 100% bonus in P/R and making sure you imported a ME1 character or earned some Paragon points; or do the mission after using the trick on Samara's mission, after killing Morinth, to max Paragon points.
