For us gamers that workout, and those who don't, can there be an option to make our character more muscular.
Also race selection would be nice addition for replay value.

Doubtful. They would need to basically remake the armors for the body models (or have the armors ignore your body type). It's just extra work that I don't see them doing.

Maybe a compromise? Three or so choices for body type at character creation. Kind of like DC Universe online does.

This would work for me. I think TOR's approach is completely acceptable.
I'd like them to have skeletons and cutscene animations for everyone too, though.

By race do you mean skin color ? We could always do that , if you mean species then no it has been confirmed that we can only be Human M/F
