Okay so, I just completed two solo matches against demons came out of it with +5 and +7 demon kills. I thought maybe it was because it had to be greater demons, even though it doesnt say that, but the thing would randomly count or not count when I killed the same fire demon, spider demon, and whip demon-thing. Again there was no one else in the lobby, so it wasnt that someone else was getting all the actual killing blows.
so, broken challenge is broken?

People have been complaining since day 1 that they can just solo challenges, no incentive for teamwork, etc. Now here it is, and people are still complaining. You just can't beat the internet.

I got 8 when i soloed a demon room, but i did one with mixed demons and got 17. so i think that only particular demons meet the requirement.

Just to help you out a bit on nomenclature. The "fire demon" is called a Rage Demon, the "spider demon" I assume is the Fear Demon you're talking about (you mean it summons fearlings 'spiders' right?), and the "whip demon" is called a Pride Demon.
Unfortunately I haven't done this weekend challenge, so I can't comment on whether or not it was potentially bugged for me as well, or if I noticed a pattern. Sorry.

What the OP was talking about wasn't that he "could" solo the challenge, but rather that he "was" soloing it, as a point of clarification for us in potentially diagnosing his issue. Which is what he was talking about, that it wasn't allegedly giving him credit on demon kills.
Not complaining about either being able to solo or not solo it. Or at least, that's how I read it.

Haha whilst I'm aware you aren't being entirely serious, I feel compelled to reply regardless. Of course you can't beat the internet, it's made up of different people with different points of view 
It wasn't the internet that complained about how easy challenges were since day 1, they were individuals, and different individuals will complain or disagree when challenges are too hard (or require team work, whatever factor is at play). That's not the sign of an indecisive internet, so to speak (I find the notion quite funny, actually ), it's actually the sign of a healthy community (perhaps a surprise given the player count for our beloved DAMP seems to be dwindling a little). The internet isn't something to be beaten, it's something to play to its strengths, and this is a fine example of that
