Because of market research. You think companies give a damn about "social constructs"? They're there to make money and so when they design a product or a toy and have to market it they'll make damn sure they'll do their research so their toys will sell well. Clearly blue stuff sells well for baby boys and pink stuff sells well for baby girls.
Research also indicates that young boys tend to prefer masculine toys and young girld tend to prefer feminine toys, Why? I don't know. Might be "social construct", or it might be something completely different. There is not enough scientific data to give a concrete answer to that question. I personally doubt it has anything to do with "social construct", because I remember so vividly that I was a very stubborn kid who wanted very specific things, which didn't always align with the latest trends at that time. I couldn't care less what was on TV. I usually wanted whatever my friends had. Because I was friends with both boys and girls, I wanted to have both boy and girl toys (but mostly boy toys though).

A lot of parents pick toys out for their kids, not the other way around. Denying that humans often conform to what's expected of them is as ludicrous as denying that social constructs exist.

Anyways, when I have a kid, they can get whatever toys they want and I'll make sure they have the opportunity to see all the options and not just whats in the specified gender section.
Forcing them to get what you want isnt the way to do it though
To be fair, the ban he was talking about is specifically designed to make sure his daughter gets to see all the options. While the way he said it initially was confusing, what he was saying wasn't that his daughter wasn't allowed to play with pink toys, just that he didn't want his friends/family buying her pink toys. And the reason for that is that if he didn't specifically say something about it, almost all of the toys his daughter got from his friends and family would be pink toys. By telling them not to buy that stuff for her, she's going to get a much wider variety of things and will be less influenced by the fact that all of her toys are pink.
Before you have a kid, it's really easy to assume that the way you do things will have the greatest impact on the way they are taught, but once you have a kid you realize just how much other people influence your kid. I had NO IDEA before I became a parent, and at 16 months in I'm just starting to see the problem.

Till a certain age. Then the kid starts to have a mind of his own and starts expressing his own preferences and desires. This can sometimes happen as early as the age of 1 (for example preferring certain foods over others).
I'm not denying that social constructs exist. But I am arguing against the narrative that we have no individuality or agency to make up our own minds on who or what we want to be in our society. Social constructs are not inherently a bad thing and their existence does not override our free will and freedom of expression. You gotta give humanity more credit than that.
