did you find using the cover system made parts of the series harder?

I did. Most of the time I didn't use the sticky cover unless it was only protection from getting shot. Reasons should be patently obvious, but in short the problems with sticky cover is you can only do it in very specific areas, limiting mobility, and you get less control over just how many people can shoot at you. I actually died less, the less I relied on sticking to cover

It depends on your playstyle, I would say. Mostly if you're a full-on caster or an Infiltrator.

 

If anything, I'd rather say "being in cover"-status was too much of a failsafe in my opinion.

If you played a vanguard. It was useless however if your played an Adept, sticky cover was core.

ME2 is the only game where I use it a decent amount.

 

In ME1 it's just clunky and annoying to use, and ME3 I wont die in 2 seconds because I'm running around out of cover entirely.

I'd love it if they would do it in the modern Tomb Raider-style (First seen in first two Army of Two games): When there is cover, character automaticaly leans against it in dynamic fashion. The old cover system is just mega clumsy and I'd rather if they would do it this way. Plus having crouch-toggle helps a lot in other aspects as well.

Yes, once you learn the mechanics, hardcover gets you killed via getting stuck to it in more situations when you are trying to relocate than it actually helps with anything. Its only real use was in stabilizing weapon accuracy, for example Sniper Shep and her/his Parkinson's afflicted aim in ME1 or trying to use ADS on Hurricane, Argus or Revenant without looking like a retard trying to do a backflip in ME3.
