But since this picture exists and it made me think of it, I would totally watch a PPV MMA-esque fight between Cassandra and another person. My first thought was Cassandra v. Ronda Rousey, but now I actually kind of think that Ronda Rousey would win that bout. Her fights never even leave the first round, and I'm pretty sure she's still undefeated.

I've never read or seen anything that has hinted at her being competent in hand-to-hand combat. She'd get her ass whipped for sure.
Grappling was a big part of historical fencing and armored combat, and I know Chevaliers actually use it as a technique for combating mages. Still, I would never put money on her over a professional, as you said.
fun fact: Chevaliers appear to eschew both two-handed weapons and grappling outside of special circumstances (like mages) because it is "dishonorable" or disdainful. Willful stupidity.

Chevaliers do embody "honour before reason" a lot of the time, but I can see the pragmaticism at work here.
Part of their training teaches them to anticipate attacks before they happen so they can counter, defend or outright avoid them. Using a shield makes sense, since not only is it better protection, but you can block enemy arrows... which you can't with two handers, not unless you happen to be preternaturally skilled and/or a Jedi?

I can understand the preference for shields perfectly fine, but to completely ignore entire categories of weapons, to the extent where a lack of experience in fighting people using such weapons is acknowledged as a problem, is not pragmatism, it's idiocy. Especially for a knightly order priding itself on the mastery of martial prowess.

Plus two handed weapons are just well... Not very useful for individual combat in 90% of situations
"Two handed weapons" in general, no, but that would be including the stuff that Dragon Age hyperbolizes to make the two-handed weapons in its own universe. You would think that would be generally so unwieldy as to be unideal for single combat, but apparently that isn't even the case according to the codex and Gaspard's own history.
In addition, the Chevaliers aren't just a school of fencers. They are trained in, and utilized for, warfare. A weapon's value for individual combat can only mean so much in that regard.

The codex (Bruiser) states that both training with that type of weapon, and training to fight against that type of weapon, are both generally neglected.

Fair but their too unwieldy, too heavy and require specific and well coordinated movement far beyond one handed weaponry, I personally see little issue in not overly specializing in a ultimately debatably useful craft.
