I put down a different email address here than the one I have connected to my Xbox Live account on EA. If so how do I change my email address here? It doesn't seem to give me the option to change it in my account settings....
Is this why my accounts won't link?

By making an account here you have created an EA Account with that email address. You can change the email at https://profile.ea.com/myinfo.do, but you cannot change it to one already attached to another EA Account.
If you have not yet associated any content with this account, which you can see at http://social.biowar...ntitlements.php, then you can simply login here with the other email address, and it will prompt you to create a new username. Then just use the other account here, and forget this one was ever created.
However if you have redeemed content to this account already, then you may have to contact EA support to sort things out.
