I've been gradually building my N7 rating while trying to upgrade equipment. Most classes have numerous good characters with entertaining play styles, the sentinel class struggles somewhat but the valkyrie and paladin pull through, but engineers just seem dull, they seem to have pretty poor damage output (like sentinels) and their various turrets and drones don't stand out too well at higher levels, although it seems the salarian is a useful team player. Does anyone favour this class and if so, what is a good setup?

try the Demolisher or Talon Mercenary
engineers are by far my most played class, the vanilla human is really good as is the Female Quarian (weak against shields, carry Acolyte to compensate for this)

Not sure how you are qualifying "damage output," OP. I enjoy playing many engineers.
The vanilla human engineer is a tech combo machine alternating between Overload and Incinerate. And since You have a male and a female engineer, you can build one with Combat Drone and one without.
The Salarian engineer has Incinerate and Energy Drain...so he is tanky while being able to take down shields, work armor down and stop just about any unit except bosses in their tracks. For example, Energy Drain will stun dragoons long enough to pop their heads as long as they're not in one of their animations. Plus...more tech combos with fire.
The Geth Engineer is a great weapons platform. Chain Overload a group of mooks and mow them down with your weapon of choice. Hunter Mode makes all weapons better, some better than others.
Male Quarian Engineer is a mad bomber with his grenades. Again...fire for armor and the Arc Grenades for shields and overall laughs. So much damage there.
Demolisher is silly...grenades everywhere. Everything goes boom... Next!
Talon debatably has the most burst damage in the game...to the point that Cain Mines are considered broken. Take Cain Mines out of the mix and you still have a great class that pumps out damage to armor who needs a weapon to take down some shields. Really good regardless of how you play him.

Well, I can say I enjoy the Female Quarian the most without a trace of doubt. But if you want something truly OP, you can't go wrong with the Male Quarian Engineer (4 points in tac scan & passives). Why I prefer the QME over Demo Girl is because you don't have to waste to many nades due to being able to get off 2 tech burts off one arc nade. And that debuff saves you nades on bosses too.

I can sort of understand not immediately seeing the path to high damage with engineers, but Sentinels?

Quarian Male, bring Grenade Capacity V. If you haven't used all of your Thermal Clip Packs by wave 6, you simply aren't throwing enough Arc Grenades.
The only Engineers I would say are mediocre at best are the Vorcha Hunter and Turian Saboteur.

Or use Disrupter Ammo, which come with the added bonus of being able to combo with her with tech bursts.

There are a lot of knowledgeable people on the boards here, OP. A lot of folks here have all the weapons and have tried damn near every build.
What may help the most is to link your manifest. People can they give you solid weapon and build combos that you can work with given the constraints of your manifest, if any.

I usually try not to abuse Arc Nades unless really needed. Or if I'm left alone, then no holding back and max termination mode activated.

The Quarian Male is one of the best characters in the game.
If he's new to the game, I strongly suggest trading points from passives to max out fitness. BSN always loves to go low on fitness, but forgets new players need it way more then us. And even then, I still prefer to max fitness even with my higher skill levels. Because, I'm a terminator, and always miss being indestructible.

Quarian: Works nicely with a wraith too.
Salarian: I really like the venom on him, although where yours is at I you may prefer to take a lighter weapon.
Geth rapid fire weapons also work well if you want more combos.
Saboteur Sabotage followed by homing grenades for tech bursts are the key.
The MQE and Demolisher and Talon are all absurdly powerful when spamming arc grenades/ cain mines, but I don't know them well enough to suggest builds really.

Male Quarian Engineer is just broken. Basically spam buttons and watch things die. That's probably the easiest Engineer class to just dominate with without really trying. Vanilla Human is pretty ridiculous as well chaining tech bursts and fire explosions.

Yeah, thats mine.
My trouble is finding the gimmick that makes the class work. I mostly have been using the female Quarian for the quickfire tech burst, I got in to using the demolisher a fair bit but they are hugely hampered on maps like condor which have poor grenade drops - end up in a party with anyone that uses grenades and you have to be a bit more selective.
