Guess what, he'll join you in fights. So accept the quest and walk into that annoying rift at level 6-7 and let the buffalo win xD

That actually works? In my game, that druffalo stops moving when hostiles are in range.
Maybe next time, I'll try that.

It's... Trickier than that, OP. If it goes too far up the hill on either side of the river it will run back to where you found it right then and there, leaving you screwed. And goodness knows those despair demons love to go all over the place, including up the hills. You also have to worry about the fact that doing it at level 7 on hard like I did means getting even the slightest spec of aggro means your basically dead. I pulled it off at that level with its help, but it still took a number of reloads.

This thought crossed my mind before, but I just ended up getting that Cow quest out of the way. I didn't know it was a level 12-15 Rift. I've done it much earlier, but this time, I'm just waiting (at level 9 right now). Not worse the hassle for now.

This one is easy to close with 2 mages with dispel. Have your tank draw the terror away from the rest of the party, and use the rest against the demon. Then finish the terror, and when the second wave is spawing, one dispel can eliminate 2 spawns that are very close, and other a third. That leaves only one monster to close the breach. I did it with a lvl 8 group.
