These are two of my favorite customization options.
With Skyhold customization, I like to change the decorations to commemorate recent achievements. After Here Lies the Abyss, I change to either a Grey Warden theme or a Ferelden theme. After Wicked Eyes, I change to an Orlesian theme. After completing the Knight's Tomb, I change to a Dalish theme to honor Taven's attempted alliance with the Inquisition. Some of the associations are a bit of a reach (there's not really much of a reason to use the Dwarven theme after completing Varric's personal quest), but I try to use all the decors at some point.
Crafting is something of a guilty pleasure. I build armor for utility, obviously, but the tinting table lets me get creative. My last two inquisitors have been worse clothes horses than Dorian (my present Inquisitor has 6 different armors in the storage chest!). I like having the ability to give each follower "theme" colors. I dress Cassandra in Storm Heart, Dales Loden Wool, and Ring Velvet with Deepstalker-tinted leather, while Dorian gets Infused Vyrantium Samite, Dragon Scales, and Bloodstone. Needless to say, Bull gets Dawnstone.
But I do have two suggestions to make crafting more fun:
Craftable Vitaar: treat it like helmets and let players choose the designs and colors. It seems that these are all animal or plant-based, so let players use vitaar schematics, pelts, and herbs to customize their look. For example, suppose you acquire a <Qunlat word> schematic that corresponds to the Keen Felandris Vitaar design. Like a helmet, it will have 2 crafting slots, one for the animal hide and a second for the herb. An optional masterwork slot could provide that third color.
Tintable weapons. Allow players to use the tinting table to customize the rest of their gear.
Edit: Also, please consider the visual design of class-specific armor models. Why does it take 20+ metal to make a battlemaster coat when it has only a tiny bit more metal to it than a 20+ cloth battlemage coat? If it takes 20+ metal to make something, I want to see more metal.
