In DA:Inquisition I loved being able to ride horses and having all the creature options. But there are a few things I would have liked to have seen with them.
• Horse back combat.
Being able to sword fight or use magic while riding your horse would have been cool. Maybe even have your noble stead attack an opponent when your off it's back.
• Seeing all of the party members on top of a horse.
I didn't like that everyone disappears when you ride your horse or creature. I think mainly because when you ride you horse, you can't hear you party's banter as you travel.
• Interactions with the creature you chose like we saw with Dog in DA:O and DA2.
Besides collecting and riding the horse/creatures, there isn't much to them story wise. Having the party members interact with them like Morrigan, Sten, Alistair, and Wynne did was fun and made the animal feel lively making the story interesting.
• Racing and race courses
I thought after being introduced to the race track in the Hinterlands, there would be more race courses open in deferent places. Maybe make it possible for the Dennet's daughter Seanna to open up new race courses after you have made a place safe. And or make a DLC to race other people online?

My only issue with them is the fact that they don't have mountain-climbing abilities.

They aren't there to climb mountains, quite the opposite they are there to jump off them.
Disagree with the OP, far from wanting more with the horses I want the elimination of the need for them at all.
