So... Asari, Geth, Salarians would be my choice.... and since the Geth don't actually need space, life support or food, we still have some space for humans.
Especially since asari can just mate with whoever lives in Andromeda to make more asari.

To prevent needing to stock up on supplemental vitamins either only take dextro-based life, e.g. Turians and Quarians, or levo-based, Humans etc.
Obviously being basically indestructible space cockroaches Vorcha can tag along regardless and Geth don't need feeding...
On a more serious note, Rachni and Yahg riding on the back of Leviathan!

Humans because me being biased, also because they have some bright minded scientists and some of the best strategists.
Krogan, might need their strength for labour purposes and inhospitable or toxic planets plus they live long life spans.
Asari, they can mate with anyone, natural biotics, and again long life spans.

Only three open slots on the Ark? Well my money would be on the Rachni, the Geth, and the Asari.
- The Rachni, because they are natural engineers, can survive extremely hostile environments unaided, and have a rapid gestation period between birth and being work/combat capable. Plus, unlike the Geth, we don't have to use up valuable metals, plastics, and electronics to have an army of disposable soldiers; just have the Queen lay a clutch of eggs and then send the newly hatched troops down to the planet in question. The only thing you have to have with the Rachni is food and a very basic life support. Also, the Rachni wouldn't need to have any sizable living space; the Queen was able to survive for 2,000 years as an egg. So at the cost of a couple Asari's carry on luggage, you can have a Queen egg in storage and then when you arrive you can hatch her and let her proceed to develop the real-estate for you; since the Rachni, similar to the Asari, don't need a counter-part to start a new colony.
- The Geth, because as software they don't require any space, or life-support. Just stick a few in an isolated server and let them ride out the trip in less space than a personal computer. Their advantages as a synthetic race will allow for easy Zero G construction and repair, and once a sizable colony base has been established, they can help run logistics far more efficiently than an organic could.
- The Asari, because of their long lives and unique reproduction. All you would need is a small staff of 25 - 30 Asari maidens and their species will be set, baring any tragic accidents on the trip to Andromeda. If it came down to it, those 25 scientists could meld with each other and the Rachni Queen if absolutely necessary for genetic diversity. Their naturally long lives will ensure that any sizable journey will not affect them too much, and they can help with the running of an established colony due to their comparatively larger life expectancy.
Since we would only need a small handful of Asari to make the trip, and because the Geth and Rachni can essentially take up no room on the voyage, we still have three whole openings for other species that want to make it to Andromeda.
So for our three other spots I would have to say that they would go to:
Salarians - Scientifically inclined, and very good at assimilating new information and tactics despite their shorter lifespans.
Humans - You didn't think they would be left behind did you? Plot armor forbids it. ![]()
Batarians - A humanoid species that can survive on the same rations as the other crew members, and possess the same qualities as humans in terms lifespans as well as general all-round usefulness.
I would like to bring the Turians and Quarians along, but their dependence on a completely separate food source will hinder the survivability of the ARK crew. ![]()

Humans are pretty cool, but there is almost no difference from batarians besides some council time choosings. Versatility would allow us to work when and where needed, plus humans would be able to reproduce much easier, since asari need a lot of compassion or something like that. Not to mention the history of a war like race and all that business.
Quarians or Geth. They aren't really different personality wise. Geth would rebel and kill a lot of Organics, maybe or something if you locked them up, and too much freedom might make them board. Video games should solve that though. Quarians could also make another race of synthetics or make cyborgs if they're willing. The cost of them actually living not in Cryo, assuming that's a thing, would be way to high but high cost now is low cost later.
Asari are great but not really for reproduction, same with Turians and Solarians. I don't see them as quite the high reproducers as Geth or Humans. I guess this spot goes to Asari or Hanar, both make good diplomats plus kinky partners for humans or anything. Assuming we meet new races, we'd need something to translate, and there's nothing to say we won't meet a bipedal centipede with a mouth and vocal cords, but speaks in dirt throwing/bile spewing. We'd need something that can engage their minds/rocks for brains, and Asari can do that. Hanar just look intimidating though, if it wasn't for their pink gooey stuffiing/living material

Two possibilities one is a dextro ark, turians for military, quarians for adaptability and geth for tech. Other option is the long life ark, asari for diplomacy, krogan for asskicking and they bring along the humans so they don't get too set in their ways (and for entertainment).

Volus (or Hanar)
What I think makes the most sense:
Asari
Salarians
Turians
And if I simply wanted to save the species I like the most:
Batarians
Turians
Elcor, Hanar or Volus - I love them all, but Volus work well with turians so they're probably the better choice

Humans? They are all just racists. And too special anyway. Leave them to fight Reapers.
Turians? Reliable, predictable and hard-working. Good for colonizing worlds with dextro-amino lifeforms. Welcome aboard.
Krogans? Agressive, but mostly due to cultural reason. Take only krogans with right views and you'll manpower for operations in very hostile enviroments, can be balanced by turians. Take your place. No, not you, the calm one.
Salarians? Quick-minded, but otherwise pretty much salvagable. Sorry, no place left.
Quarians? Taking on colonization trip someone who'll die without advanced hermetic suit? No way.
Hanar? Your contribution to film industry will be remembered. Rest in dark waters.
Elcors? Too slow, maybe you'll get in time for next Ark.
Volus? Credits have no value now, too bad.
Asari, rachni and hanar. Tentacle is justice.
