What about fat people? It's like everyone works out daily for an hour. In ME1 we had one heavyset cop - Eddie Lang. How come no more? Mass Effect: home to the beautiful people - except we don't know what's under the masks or behind those pressure suits.

The entries for Earth say that there are still big gaps between the nations on Earth. Could be an explanation why certain nationalities are overrepresented in space.
I don't think any nations as we know them today exist in the Mass Effect universe. If I remember correctly they've all merged into large superstates by the time of ME1. Some cities are merged too. Seattle and Vancouver are a single megapolis in ME1, and the same was mentioned for Dallas and Houston.
We know of the US-Canada-Mexico merger, the European Union (hardly surprising) and that there still a China, no idea what it looks like. last one has a different name but could even be smaller than current day China.
Zaheed and Khalisah Bint Sinan al Jilani had Middle Eastern Names. I always thought that there was diversity, and I think it's a good thing. I'm pro diversity, and I disagree that this series didn't have it.And then there's Mr. Bahtia in ME, whom I think is Indian.

I think there should be more black and asian characters. It's certainly true that they're not excluded, but they still don't really seem to reflect the human population as it's likely to be in the 2180s.
I mean, currently more or less 5 Billion out of 7 Billion live in Asia or Africa, and if the population is growing up to 11 Billion then that proportion would increase.
I suppose you could plausibly argue that the people in space aren't necessarily representative of the people on Earth, but the Mass Effect population make up still seems off.
I can give live action sci-fi a pass on this because they're limited by appearances of the pool of actors they're hiring from, but a computer game has no real reason for it.
It should at the very least have more Asian characters, considering China is now approaching superpower status and is the third country (after Russia and the United States) to send humans into space independently. Japan, South Korea and India also have fairly robust space programs.

For Blondes I know one of the novels mentioned that natural blondes are rare in the time Mass Effect takes place in.
As for more diversity in characters that is unfortunately more limited by character model budgets rather than a desire to create unique and diverse model sculpts.

I was pretty surprised to see Ethan Jeong and Emily Wong in ME1. And of course you have Katsumi/Maeko, but the former two definitely turned my head cause you seriously just don't see alot of Chinese/Koreans, at all, especially in non-comical roles, even though the Chinese are the most populous ethnic group in the entire world (it's always Japanese people you see in Western fiction, probably because their names sound more chic and ninja-ey and whatever other limited nonsense perceptions some Westerners have of East Asia as a whole)
The overwhelming whiteness of sci fi is just weird and hard to believe in general, because sci-fi tends to portrays a globalized military entity to represent earth (i.e. Systems Alliance, Starfleet) and even though Caucasians are largely outnumbered by non-Caucasians, and even though the East has just as much presence and muscle in the world of technological innovation as the West, you mostly just see white people.
So yes I agree with you OP, to help me fruther suspend my disbelief, the ME universe could really use more non-Caucasian human characters in the foreground and background, especially Asians. When you think technology and science, it's not like China and India don't exist.
