One of the great things about the Mass Effect Trilogy is the large amount of possibilities for your play style or narrative. I have thought of a few interesting ways you can play the entire trilogy, both in terms of combat and personality. Here are some, and feel free to add more ideas.

Wizard: as an adept or a vanguard, try playing through the whole game with just your biotic powers.

Hacker: as an engineer or an infiltrator, try playing the game with just your tech powers.

Just for Show: choose paragon options in general, but be renegade to your own squad mates.

Rebel with a Heart: choose renegade options in general, but be paragon to your own squad mates.

Government Official: agree with every choice or decision presented by the Citadel and other government figures.

Rebel: be renegade with the government and government officials.

Creepy dude: Be always renegade. Try and romance both Liara and either Kaidan/Ashley, and use the dialogue option to try and f*ck both of them.

Here's a few, with "thematic" classes.

True Hero - Paragon in situations and dialogue

Fits thematically with the Vanguard ("I'll save you!" or "Have at thee!") and Sentinel (a Knight in shining armor!)

The Vigilante - Paragon involving situations like "Save the colony or grab the package", but Renegade in dialogue.

Fits thematically with the Infiltrator ("I hate it when he vanishes like that...")

Magnificent Bastard - Renegade in situations, but Paragon in dialogue, especially romance.

Fits thematically with the Adept (winning battles without firing a shot)

Mad Scientist - always choosing in favor of machines over organics, i.e. Geth instead of Quarians, keeping David Archer for Project Overlord (you monster)

Fits thematically with the Engineer (Muahahahaha!!!  IT LIVES!  ...or doesn't in some cases, but by my calculations IT LIVES!!!)

The Sergeant - Paragon with civilians, Renegade with politicians, and either one with their crew and other soldiers, depending on the situation.

Fits thematically with the Soldier ("WHY am I still getting hit by Reapers?  I ORDERED THEM TAKEN OUT AN HOUR AGO!")

Serial Seducer - romance different people in each game

We'll bang, ok? - romance/sleep more than two people in each game

Lawful/Chaotic Neutral - you can choose to align to either Paragon/Renegade but only choose middle dialogue all time. Never pick colored dialogues, never click on any interrupt. When the option come, pick non-colored paragon/renegade decisions. In ME3, because there are no middle conversation dialogue, pick paragon->renegade or renegade->paragon responses (since renegade response usually meant conversation ender, start with paragon choice next)
