So I copied the logbook conversation from SoZ that allows you to create your own party to a test module, plus the associated scripts, and I get..... the OC style party picker? Is there a tutorial out there going through what you need to do to have SoZ party creation?

SoZ party creation only works in a campaign, not in a single module.  I believe Kaldor Silverwand made a good tutorial on his blog.  (I don't have a direct link.)

My test module is part of a campaign, as I replicate over all the scripts/conversations etc. For me, test module is basically a copy of regular module and campaign, minus areas.

Okay, good.  In that case, I recommend looking on that blog for a tutorial.  I can't remember the steps offhand, but do check your campaign settings in the plugins menu and ensure that Party Creation is set to TRUE.
