Planescape: Torment, for instance.

 

Haven't played it myself yet, but people tend to view it as an 'essential'.

 

While I would definitely recommend checking out Planescape: Torment I am not entirely sure how anyone can recommend a game without having played it first? Unless of course your post is a subtle protest at the idea of calling any game "essential"?

 

Would much rather hear people's personal opinions on games they have actually played than hear them regurgitate hearsay.

It is.  Age aside, it's possibly one of the greatest RPGs ever made.

 

Also, the original Deus Ex, Civilization 2, and Legend of Zelda

I'm aware, hence why I commented that people generally view that particular entry as such, considering how it is a game that tends to fall into topics like these. Simply wanted to point it out.

 

But if you are solely interested in hearing what individuals themselves bring to the table on games they personally feel should be experienced, then I can oblige on that front.

 

  • Red Dead Redemption--It's mixture of environment alongside quest design, in addition to its characters (portraying the social views and perceptions of the era that it takes place in) alongside the overall story, makes the whole game a worthwhile experience in the open-world genre, and is one I'd consider on should add to their list.
  • Bioshock--The games atmosphere and environmental aesthetics are pervasive and striking, the gameplay mechanics offers a decent customization to fit into your desired play-stile, and of course the use of storytelling through exploration and subversion of player agency are powerful. The stories usage of Randian utilitarian philosophy in its world building and the plot's confrontation of the player's notions of free will is great, and one that kept me engaged right till the very end.
  • Portal--Featuring innovative gameplay mechanics, a rather exquisite sense of humor and a compelling story to boot, makes the whole experience one that is thoroughly enjoyable.
  • The Witcher 2: Assassins of Kings--The game manages to depict a dark, yet quite beautiful setting that delivers an incredibly mature and engrossing story, one centering on political machinations as well as personal struggles, that requires one to play it twice to get the whole story, in addition of having a challenging combat, which makes the game a very satisfying treat for someone like myself.

There of course many others that I are worth a mention, but most of them have already been mentioned by others here.
