During my first playthrough, it seemed as if you had to hit certain benchmarks to unlock specializations like "champion" for warriors or "arcane warrior" for mages.  Champion was unlocked after saving Arl Eamon at Redcliffe and Arcane Warrior was unlocked while investigating ruins in the Elven forrest.  On my second go, the specializations seem to become available sooner.  My PC had the choice to be a champion or a Templar even before visiting Redcliffe.  Arcane Warrior unlocked for Wynne and I haven't hit the Brecellian forest yet.  What gives?

You have to obtain them just once in your profile, they are then available for all your future characters. They are basically achievement based things...

They become available at levels 7 and 14.

I think it's a neat little thing that I enjoy....

Definitely, different specialisations are attained based you your character's moral compass, i.e. there are some that are only available if you play a evil character and vice versa.
