It's always been ridiculously easy for me to earn Zevran's approval.
He despises pointless cruelty and denounces a Warden who kills the Dalish, the mages, or tolerates the alienage elves being sold into slavery. When he asks you if you disagree that some people simply need to die, I always agree with him - my Tabris with Vaughan, my Brosca with Beraht, Cousland with Howe, etc. As far as I'm concerned, all those people had it coming, and my characters don't pretend not to have enjoyed their vengeance.
You get approval for being friendly, flirtatious, and not treating him like scum for doing what he was raised to do.
Just don't go to Denerim early in the game, since that triggers the encounter with Taliesen, and he will either turn on you (low approval) or refuse to take sides (middling approval). Save it for when his approval's up and he'll defend you against Taliesen.
Plus: if your warden in love with Zevran, every time when the warden call Zevran in his/her tent, get an approval point.
I always hit it off with Zevran. I didn't even know he would turn on the Warden until I saw somebody say it happened to him.
Then again, I get Morrigan's approval easily while everyone else whines that she's so hard to please (Alistair, OTOH...).

Morrigan's approval is the easiest to obtain, even without gifts, just answer her that she's right when you talk to her and you can start her romance pretty early in the game ![]()
Then again, it depends on how you roleplay your character.

But I managed to keep him in the party with just the normal gifts. I think the gloves are the most important. In the chest at the fake shade camp. I think the best time is to wait until after he mentions his mother. He mentioned her on the way to the elven ruins, and I got the gloves soon after. So there were options to mention what he said about his mother. I think that grants extra approval. I also had Zathrian end the curse. Not sure if Zevran was in my party at that point or not, but I think that gives approval.
I think he needs to be around +50 to stick with you. Not sure. Try +70 just to be sure.
I'm pretty sure my Hero disagreed with his assassinations, but not to the point of being rude. I think there is an option to disagree that gives less disapproval. My Hero also disagreed with his attempt to flirt, and that only gives slight disapproval.
