I'd like more Bun hairstyles that don't make our Character look like she has a caterpillar sticking out from the back of her head (ME3) Like a Bun hairstyle with some bangs or some small curls on the side.

Windows are structual weaknesses. 
Another things I might add to the list is:
Attention to the details. For example I played ME3 recently and noticed how bad some details are like:
1)Turian soldiers using the Avenger assault rifle when they should have used the Phaeston (Turian assault rifle)
2)Salarian soldiers using the Avenger assault rifle instead of Venoms or a salarian based weapon
3)Asari usings the Avenger instead of Asari made weapons like the Disciple
4)Quarians not using the Adas or the Reagar Carabine
How could it be that every species use a human made weapon? Is the Avenger the AK47 of ME?
I do know that some of these weapons appeared later due to MP DLC but I think they should be more attentive to details like this when they design the weapons of the main game as to have all major species covered with their own weapons. It feels like cutting corners of little impact but for some reason I notice these things immediatly. Kind of hope they pay more attention to these kind of things.

Archievements that actually have a reason to be there.
1. Don´t bother us with things like "100 biotic kills", or "Complete 10 mission" ... we will complete these eventually no matter how we play. (I´ve done tons of such and can´t even remember I did.
2. Maybe nice rewards for special A. Nothing game influencing, more cosmetic, ambient, clothing, maybe mini cutscrenes as easteregg (to much work? ^^ ) ...

Yes, full support this! Someone like Niftu Cal as Squadmember or President of the andromedan Volus. But i think that Volus will be implemented 100% - someone has to be there for establishing space trades - who could be better than Volus & Elcor?

Some extremely hard missions like the Armax mirror match. Make it an optional/sidequest thing, so it's not necessary to complete the game, but can provide veteran players with a little more challenge. (And beginners can always play on casual, so it is do-able for them as well)
Replying to mail would be amazing in any way, that always bothered me in the first trilogy...I would love to reply negatively or positively to my emails.

It'd be fun to have like 2 or 3 canned responses to reflect a certain personality.
Back in the day there was a really cool looking concept art for ME1's galaxy map, but I'm too lazy to find it right now. A more interactive, visually appealing galaxy map (with the return of the galaxy map music of course!) than the one that we had in the previous games.

The ability to name the protagonist is a bit of customization that I always found unnecessary. I'd much rather have the protagonist referred to by their first name when appropriate, than to have a customizable first name but the character only being referred to by rank, title, or last name in dialogue. The latter results in some clunky dialogue.
Not imperative, but things I would find cool...
- Ability to change colours of the civilian clothes for the protagonist.
- Chance to have a colored strand of hair, and a wheel to decide the color.
- a minigame like Quasar or Paazak.
- Minigame to open loot contaniers or doors, like in ME1-2.
- An Hanar as part of the crew.

I don't see why the later is needed, male inqutior sounds natural no mater what ethnicity you choose to play as.
Now a Tone slider ala Saint's row would be great
Choosing from a variety of walk cycles and having that actually put into cutscenes as well as game play. Or at the very least the in game animations and cutscene animation stay consistent if some characters move differently or if the in game walk animations are different between genders.

Achievements that give a little bonus to NG+
Being able to alter the way your character looks in game (preferably in the vanilla game and not DLC)
